Mam. Rice should be fully fully smooth. Salt should not be added immediately after grinding. Salt depletes the fermentation. First day idli. 2nd day Dosa. 3rd day onwards utthappam. Set dosa. Little dough mix midium rava and wet masala for rava Dosa. This is the trick. All Dosa should be made on cast iron Tawa with till oil only. Non stick Dosas are fake.

Every recipe others use baking soda baking powder eno and other s chemical It's harmful effects on our stomach and they say s healthy recipe I like ur this othentic way of and please try always this way 🙏🏻

Madam wrong information urad dal has no gluten ,it is gluten free and meethi does the work of fermentation not colour only 🙏

No it doesn't spoil. When you add salt to the batter it gets fermented
