Chili con Fritos

- A luxuriously thick chili topped with crunchy Fritos corn chips. Ingredients listed below:
2 tablespoons olive oil
1 large green bell pepper
2 teaspoons garlic paste (or 2 cloves minced garlic)
1 (14.5 oz) can diced tomatoes and their juices
2 teaspoons onion powder
1 teaspoon garlic powder (can't have enough garlic!)
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 generous tablespoons brown sugar
1 lb ground beef (80-85% lean), cooked and drained*
1 (15.5 oz) can red kidney beans and their liquid
1-2 tablespoons minced fresh parsley
1 (6oz) can plain tomato paste
1 (2.25 oz) can sliced black olives

In northeastern Illinois this is called Frito Pie. Best served with a good Italian beef or a French Dip With Au Jus. And an RC cola with a straw lots of napkins.

I realize this video was from a couple of years ago. I watch your videos more than once, quite often. The brown sugar you add is a very good flavor enhancer to chili. Neat idea. Also, with everyone experiencing the cold, wet, and snowy weather we are having, Chili with Fritos is a real comfort food idea…maybe add a little cheese on top. Thanks for the recipe.
I love the idea of freezing in bulk. We had a veggie garden and peach trees when I was a kid and my mom canned most of it because we couldn't possibly eat all of what we harvested. IMHO canning is a pain in the you-know-what. Compared to canning, freezing is a breeze. I'm from Texas and I've made my share of chili and I love trying new chili recipes. Thanks for this one! 😋
My Mom would fix chili, cut tamales into it then topped with fritos and bake until heated through and chips just started to brown in spots. Last few minutes it was topped with shredded cheddar to melt. YUM
Looks great. AND, I had no idea you could freeze green peppers in bulk like that. I think I thought they’d be mushy when they thawed. Great idea about them, and freezing already-cooked hamburger. And another childhood tasty meal that you could get at the Kream Kastle Drive Inn was Frito chili pie, which was a bag of Fritos, topped with some good chili and shredded cheese. You could eat it right out of the bag. It was a favorite treat. I think anything with some good chili, Fritos and cheese would be perfect on a cold day (or a hot summer day after swimming!). I add a can of no salt added Rotel in my chili. I love the flavor of the green chilis along with some splashes of Tapitio in my bowl. Tonight, I had leftover pickled red onion, cucumber and radish to munch on as a side to my chili this evening.

This looks so delicious!! I'm in Louisiana and when my mom cooked it she called it Frito Pie. Instead of putting the Fritos on top the chili was poured on top of the Fritos. 😄 I am excited to use your wonderful home made chili!!! Thanks Kevin
The Texas public schools serve this meal regularly. They call it Frito Pie (which is the common term for it in TX). Only in Texas, many people put the Fritos at the bottom of the dish with chili on top. You may be aware that Frito chips were created in Texas and the first major product of the Frito-Lay snack company (based in Dallas, TX).

i made a taco salad bowl with Fritos and tomatoes and black olives and salsa and cheddar cheese and maybe some sour creme a few times and lettuce too it was tasty i think i got the idea from my mother i think she used to make it years ago. i tried it with the cascadia corn chips they are not as good tasting as the Fritos however not enough flavor and salt.

Like the peppers, I cut up a whole bag of onions and freeze. I have one of those onion choppers. Easy peezee! OK, what are you using on your face? It's glowing! Love it!

I am certainly interested in chili! I am going to try your chili soon. I go have a recipe for chili that calls for coco. You can't taste it but it adds a richness that is amazing
Your chili is different from the Southern chili. We use red beans or rather pintos and we want plenty of liquid. What you made with the Fritos we call that Frito pie with some cheese added. Very yummy though what you made I'm sure.

This looks wonderful to me. One question. Did you have to “flash freeze” the cooked ground beef so it didn’t stick together in the freezer?

In general, I notice that you are very frugal with salt. Just saying.
I was just wishing Fritos would make a low sodium chip. Since the pandemic has made it difficult to find low sodium items, I've started baking my own chips.
