Bacon on burgers may not be your thing. It wasn't mine for years. I didn't like the texture, ratio, or structure it would give to the burger.
Then @adventuresofafatguy got inspired by an old episode of @guyfieri on DDD going to @hodads1502 and spotted a clip of them boiling the bacon.
We didn't know how long to boil it for, or what other steps were involved, so after a couple tests and a chat about our findings, THIS is the recipe we found.
Recipe:
2-3 strips of bacon per burger (Depending on how bacony you like it)
Boil the bacon for about 5-7 minutes. It doesn't take long, but without this step, the patty just doesn't hold together at all.
Give it a rough chop and then make a pile on a cast iron pan or flattop grill. Make it the same diameter that you want the final patty, but 2-3 times as thick. Then as the bacon shrinks and comes together, it will form a thin smash patty.
Place a weight or lid on the patty while it cooks for 3-4 minutes, and when it is golden brown on the edges, give it a flip and cook for another 2-3 minutes on the other side.
These are actually great to make ahead of time and just toss on the burger as people want them. Like little bacon discs. Crispy and delicious.

I've never had an issue with just putting bacon strips on a burger. If they're crispy enough, you'll just bite right through them. I just make sure they don't hang off the side. Interesting idea, though, I must say.

Actually, boiling bacon is better than cooking it normally because the fat usually takes longer to cook than the muscle part, and the water allows time for the fat to render out leaving the bacon more evenly cooked.

You were on thin ice after "hate bacon on burgers", you lost me entirely at "boil the bacon"
Surprisingly that's actually a pretty good though the way I usually do it is it's in the pan it's going to cook in anyway. Basically you cover the bacon with a layer of water, it boils which allows the connective tissue in the bacon to render more becoming more tender, and then the water boils away and the bacon cooks like normal. It's just an extra step and no extra work and it has actually led to some of the most insanely tender and crispy bacon I've had highly recommend it. I do imagine that just straight boiling it and removing it from that water will remove some flavor though.
It's actually not that bad. I never fully submerge, but you can add a bit of water to a pan you're gonna fry bacon in, and it'll help render the fat faster and let you get a bit more even cooking if you don't have a press or a cast iron/something that holds heat well.
I find a big issue with a regular non-stick is that you can end up with wavy bacon where it's not all cooked as evenly (if you're anal about it like I am lmao)
I have a cast iron and a press though, so it really doesn't matter to me anymore, but it's useful if I'm stuck somewhere without them.

I just cut the bacon up into large bits (about the size of an M&M) and place them evenly along the bun. They're small enough that they stick/adhere well to sauce or cheese without falling out, and are dispersed enough to not have to worry about too much/no bacon in each bite.

That’s actually a way better solution. I could put Mayo on the bun and them the bacon bits on that. I would try this guy’s way once. To see if it truly is any better. Knowing me I’ll mess this up. I don’t own anything that I can smash the bacon down with anyway. I just don’t see it working in my kitchen with the limited tools I have.
I have a better idea, wrap the bacon around the burger. That may not be ideal for people who like crispy bacon but to that I say just use extra bacon then put half on the bottom bun and half on the top bun.

Thanks for showing off Hodads, my family has been close with them for well over 30 years and I had the chance to work with them at the downtown location for a brief time a few years back. my brother helped build that #2 location and the original off Newport gives me the fondest memories of high school back in 2010. I will give your recipe a try this weekend.
