The reason you got the Monsters Hunted achievement is because it counts the Warden as a boss not a hostile mob
Warden is supposed to be avoidable not direct attacking it, so that's probably why they didn't include it on monster hunted achievement

Yea warden isn’t a boss, it’s not ment to be killed

@@IceGalaxy-de5dk it was stated itself its not meant to be killed you should run from it normally you cant solo it unless your extremely skilled and stacked its just a side quest not a boss it gaurds the caves

Zombie Horses don't spawn naturally so that is why they didn't get it

It's to bad the health want to scale with all the mobs, or had hearts shown equal to the right amount.
Tip:you can use llama to be like a player wither for flying and elder guardian for underwater

What i don't understand is that you said you get the exact amount of health that the mob you kill has, yet when you killed the wither you only got 40 hearts not 300. Both enderdragon and wither combine have 500 heath, the wither additionally has 300 and the enderdragon has 200, and the warden has 500.
