During this time they got to know the taste and value of tripe which was ignored and trashed. If we look at its nutritional value, 85 grams cooked tripe will gives 80 calories, 10 gram of protein, 1.7 grams of carbohydrates and 3.4 grams of fat which includes 1.2 grams of saturated fat.
Tripe is stomach pouch of an animal which is known with different names in India.The common names are Boti, Peti,Vajari, Pachounie etc. Before cooking one should make sure to clean it with one's own hand whether it is already cleaned while purchased.

We can do it with warm water also!!
yesterday i have done using boil water,salt and vinegar it was very labourious process but it is worthwhile i think about using slaked lime it may speed up the process lets try next time.

There is no Any other way to clean..as u r applyed lime Which may decrease its taste.
Clean it with warm water. First dip it into warm water for two minutes and scrape the dirt with knife. Then leave it into vinegar for 5 minutes and rinse again it with clean warm water. Thanks!
Chef, what you removed while cleaning was some of the best known pro-biotic stuff...but then there is no other way to clean it i suppose...
Cleaning of tripe is very crucial. If some of the particle remain with it, it will spoil the whole taste.
