Someone should be holding the thermometer so that it is not touching the bottom of the test tube. Your results for this experiment will not be accurate because the thermometer is measuring the temperature change of the glass, not the water.
Nice experiment, but... You can do the same with a piece of wood, and yet, humans chewing on a piece of wood will not get the same percentage of energy from the wood as they do from the 'food'. How can we measure how much energy a human would actually get from a certain amount of food?
You’d probably choose to use a small bit of popadom, but if you were determined to use something bigger then yes, you would. Maybe using forceps instead of a mounted needle though

the reason it doesn't work with wood is that humans can't digest it. if humans could digest wood, they would get whatever energy the wood contained.
