The raspberries are just starting to appear. I wanted to start making the cake right away with plenty of raspberries on top. Genuise was made with a little red rice flour and baked, and it was pink and pretty. I roasted this pink genuise and two regular genouise generously. I'm going to put the rest in the freezer... If you want it just right, bake 1/2 of the recipe below.

[ingredients]
[Pink Genuise] 220g eggs, 80g sugar, 2-3 drops vanilla extract , 35g unsalted butter, 45g milk, 120g cake flour, 2g red rice flour
[Genouise] E220g eggs, 80g sugar, 2-3 drops vanilla extract , 35g unsalted butter, 45g milk, 120g cake flour
[Raspberry Jam] 250g frozen raspberries, 50g sugar, 5g lemon juice
Cream A 250g, Sugar A 25g, Cream B 200g, Sugar B 20g, Raspberry 200g
[how to make]
1. 1. Put eggs, sugar, and vanilla extract in a bowl with a hot water bath, mix well, and raise the temperature to 38-40 degrees.
2. Keep Unsalted Butter and Milk Warm
3. Make 1 egg until rich bubbles form (ribbon stage), and sift the cake flour to mix
4. Mix part of the batter into the butter and milk mixture
5. Add 4 to 3, mix well, bake in an 18cm pan in an oven preheated to 170 degrees for 40 minutes, then cool completely.
6. Cut 4 pieces of Pink Genoise and Normal Genoise each 1cm high (2 pieces of Pink Genoise and 2 pieces of Genuise are used)
7. Cut Genoise with an 15cm Ring
8. Boil frozen raspberries and sugar at low heat.
9. Add lemon juice, boil a little more, and cool completely.
10. Add heavy cream A and sugar A and whip hard to make a low wall when applying cream and put raspberry jam on top.
11. After adding the cream, put it in the refrigerator for about 30 minutes.
12. Whip heavy cream B and sugar B at about 80% and apply it smoothly, and pipe the remaining cream round the top of the cake.
13. Finish by garnishing with raspberries, mint leaves, and decosnow.
