    Ingredients:
    1.5 lbs beef chuck, cut into chunks
    1 tbsp olive oil
    2 onionS, chopped
    6 carrots, chopped
    6 celery stalks, sliced
    3 garlic cloves, minced
    6 cups beef broth
    1/2 cup pearl barley
    2 tbsp tomato paste
    1 tsp dried thyme
    4-5 bay leaves
    Salt and pepper to taste
    Fresh parsley for garnish (optional)
    Instructions:
    Sear the beef cubes in olive oil until browned on all sides. Set aside.
    Sauté onion, carrots, and celery until softened.
    Add garlic, tomato paste, thyme, and bay leaves. Cook for 1 minute.
    Return beef to the pot, add beef broth.
    Simmer for 45 minutes and add barley.
    Cook for another 15 minutes until barley is cooked.
    Serve and enjoy!
