      @@bulkan.evcimen Lockdown boredom has seen me trying out lots of new recipes to stay sane. A few weeks ago I made adobo sauce because I'd seen it in a video and can't buy it where I live. Now that I've found this channel I can see myself trying a few fermented recipes as well!

    If you get a larger magnetic stirrer bar (longer and thicker) you can set it at a lower speed and it will be much quieter. Retired chemist. Sauce looks great.

      Yeah. Sounds to me like the sauce is too thick for the magnet and it's flailing around in there. Not going to pretend I'm an expert or have as much experience as you but I did work 4 years in a lab where I set up 4-5 big mixtures daily with big magnetic stir plates. Really sounds like the magnet had been thrown off centre.

      Yes I make colloidal silver and I bought 3 different sizes of magnetic stirrer's. Good call. I'm not a scientist but some have nick named me a mad scientist,lol.

    You could just press zero on scale with the bowl on top so you don't have to do the math on paper :)

      Lol yeah I know...but the bloody scale switches off after a minute or so...and when I am filming, sometimes I have do another take...and by the time I look down, the scale reset itself and I have to do it again!!

      Ahh, I thought your scale is not one of those. Mine turns off after 10sec and it's just annoying.
      I'm still searching for digital scale that has on/off button. If you find one please share where did you found it.
      Anyhow, growing in my micro garden on my balcony, I managed to get 2kg this season. Still, some are ripening, around 50 pods.
      My first ferment (2 months old) is ready to become my first hot sauce. Yey !
      Only have 4 jars that are fermenting so I can't go wrong and it must be perfect as it can be. :)
      I'm still looking for some good recipe. Can't decide, hehe

      Mine is ok with the heavy items. Although there is maybe a couple grams fluctuation... But at that volume it isn't too serious

    As a hot sauce maker and owner of Zona Hot Sauce, I stand by what you just did. Amazing. The problem is it takes forever, but well worth the wait for the final product. I mix 25 percent Cayenne, 25 percent chile de Arbol, 25 percent fresh red jalapeno and 25 percent ghost pepper. It changes the flavor profile but it makes an amazing sauce for wings. I save half the batch for savory and half for sweet by adding 1 full pineapple and 3 mangos per 5 liters of sauce. Make sure you Pasteurize if you add fruit at the end. so bomb

      @@NepetaLeijon I know this is old but to pasteurize, heat filled, capped bottles in a large pot of water with canning rack on the bottom. Bring to 180F for 10 mins without allowing the temp to drop.
      It must be maintained at 180F consistently.

    Glad to know that sauces separating is normal. My first sauce is doing that and i had thought i had done something incorrectly... Great tip with the ice cube tray!

      Yeah, even these once which I use the stirplate with will seperate in time (same thing happens with store bought Tabasco sauce!). A dash (and I mean tiny dash) of Xantham gum can be helpful.

      Any stabiliser will do but separation is natural so it's ultimately not necessary. All natural is the way to go.

    I’m a Buffalo sauce guy! I make my own brew (just in the microwave) with Tabasco, Louisiana sauce, vinegar, sugar. Great tips on emulsification! Made a lot of sense. Great video!

    Can't find words to explain the respect I feel for the work you are putting in to you passion. Thank you very very much for all of this lovely videos. I will try to grow some peppers next season and I'm wondering if you have some suggestions for a newbegginer in picking pepper varieties. I'm living in hot and sunny SWEDEN but thanks to god I have a greenhouse 🤙..

      Hello Safet, thank you for your kind words!
      I could recommend a couple different peppers for you as a beginner, but I would need to know what kind of heat/spiciness do you like?
      - For a sweet pepper with no heat, the Ramiro is a good pepper
      - For a mild pepper, jalapenos are a great one!
      - For a slightly hotter, great for cooking pepper, I would go with the Cayenne.
      - Something quite spicy, definitely look at the Super Chilli (it is very easy to grow) or the Piri Piri (a little more challenging, but a better flavour.)
      - Very spicy and to warm you up in the cold Swedish winter, try a Habanero
      - For something that will melt the snow on your roof, and probably melt your face too, I would suggest the 7Pot Primo

      @@ChilliChump thank you for the tips. I'm a hot head and I love to challenge my self. Haven't tried 7pot or any thing that hot but ordinary habaneros is not a problem to chew on 😂. I love "Thai style" chillies and was wonder which one is the tastiest. I will definitely grow piri piri and super chilli will also go in to the pots. Almost every one in my family is chilli heads love to eat fresh and green chillies like jalapeno or orange peppers like aji Amarillo. I'm planning to grow some "milder" chills for snacking some hotter chillies like piri piri for cooking and some Hot ones to make sauces of. Hope you can give me some tips. Best of regards Safet

    Love your vids. Really concise and very educational / informative! I cook a lot of Indian curry with a lot of chilli and I always take the dishes to another dimension with the use of black pepper. It really elevates the chilli flavour and creates a full moon party in your mouth. You might want to try adding 3 x tbspn to your next batch of hot sauce. Jus' for kicks!

    Hey, love your vids. A few tips for your equipment used here and emulsification. You can get longer stir rods that will agitate your mix properly, that little one you have is for a smaller flask/volume. Also, look into sonicators. They sell sonicators used for jewelry cleaning and you can place a jar of your mixture inside the sonicator filled with water. The sonication will mix the contents very thoroughly and will stay emulsified for much longer than standard mixing/agitation.

    Very fond of this channel. Just followed this recipe, almost to the point. Including fermentation container, fermentation chamber and eventually magnetic stirrer. Will be very interesting to see the end result in 5-6 weeks.
    The varieties I used were cayenette (450g), Aji Limo (150g) and blue Christmas (100g).

    What's your opinion about adding raw garlic to let it ferment together with the chillies instead of the powder afterwards? I tried it once and it worked well, but I didn't like the taste of the sauce afterwards, so I'm wondering if the garlic was the problem...

      Fresh garlic works well in a ferment! I have a couple videos where I do that. For this particular sauce I was replicating a lot of the Frank's hot sauce flavour, and they use garlic powder. That's the only reason really

    This inspired me to try and make my own hot buffalo wing sauce. Cayenne and Ring of fire peppers are coming along nicely. Just started sprouting additional sets of leaves.

    You've said on few videos now that freezing kills lactobacillus and you can't ferment with frozen peppers. That's somewhat true, some of them do die, but if you're not freezing and thawnig multiple times (which kills them significantly), even with decreased numbers of bacteria, there's still fermentation happening. It may be slower to start with, that's why some people on the internet suggest at least some amount of fresh vegetables, but I've also found plenty of people claiming they ferment only frozen stuff and everything works fine. There's a concern that slow lactobacillus start benefits growth of other bad bacteria, but they've gone trough the same freezing treatment and you're also adding salt that's helping good guys, so I don't know how big that concern should be.
    Someone once gave me a tip of sprinkling some salt on top of everything in a jar, so bad stuff has problems growing there, but I've never tried that because I only made stuff in a brine, not this style of mash fermentation. Could be a good practice, just in case...

      I should probably be more clear in the videos when I talk about the frozen peppers and lactobacillus. It is as you say, there may be some lactobacillus still alive, but you give your sauce a much better chance of success by having fresh peppers in there to kick start the whole process!

    sure would like to have a tastes of your hot sauces > again i like that color! Rite ! never throw away the pulp ! like you said it excellent in other things too> Might even dry it out, grind it up! For a dry pepper> i even use the seeds and skins too. > I only throw away the stems

      The white pill is a Teflon coated magnetic stir bar. When you see me using a stir plate later, it's the stir bar that is spinning inside the container

      Habanero isn't unbearably hot, it has a lovely sting to it but the important thing is that it has a distinct taste from other chillipeppers.
