    Best Filipino dish hands down. Thanks for these videos. I've missed my dear mom's home cooking for over a decade but thanks to you guys I was inspired to cook for my self. Your videos made me realize how simple and doable Filipino food is to make. Thank you.

    I was also wondering about the deletion of the tripe, but the addition of tendon sounds great. I'm an Instant Pot newbie and I was very happy to find your site. Have you used the Instant Pot to cook the tripe? Tripe recipes for Instant Pot are few and far between and I was hoping you might offer a tip or two about the combination in the Instant Pot? Would you cook them together or separately? Like I said before I'm a newbie trying to figure this thing out?? Thanks for the recipes!! -Will-

      Hi Will! We actually haven't tried cooking tripe or tendon in the Instant Pot yet, so we don't have any tips off hand. But there's a Filipino Recipe Instant Pot group on facebook that might be able to help!

    Can you use the Sous Vide if you don't have an Instant Pot??? Also I wanted to add stew beef with the oxtail.. is that also good?? I think my biggest thing I hate with oxtail is the added fat.. there is alot of fat on that at times.. how did you guys get rid of most of it when you prepped to put into the instant pot & did you guys rinse it thoroughly before prepping??

      We’ve never tried sous vide for cooking the oxtail, but we imagine it would take a lot longer. Also, we’ve never tried using stew beef, so we can’t advise on that either 😂 As for the oxtail we used, we didn’t actually trim off any fat; it was already like that when we bought it. We didn’t rinse our oxtail, but it wouldn’t hurt if you did. 😊

    I need to get me an instant pot, that's the only reason I don't cook kare kare often: the cook time. I need to eat something first then cook it, otherwise I'll die of starvation before it's finished.
    If you do requests, I wanna see laing in the future!

      You could also just use a normal pressure cooker if you have one. The pressure cooking time might be a little different. For us it takes 30 minutes to cook the oxtail in a regular pressure cooker, whereas with an instant pot it takes 45 minutes. We like the instant pot just because it's less intimidating than a regular pressure cooker and doesn't sound like a ticking bomb.
      We have laing on our list of videos to make! We have a good amount of requests already, but we'll eventually make our way to it!! :)

    Looks awesome. Any mods to the cooking time if using straight frozen oxtails?

      Thank you!!! In general it’s not recommended that frozen meat is pressure cooked. It could actually drastically increase the cook time to fully cook your meat, and there’s a possibility it may not cook all the way through. Hope that helps! 😊

    but there's a Saute option on the instant pot... why clean another pan lol

      😂 That is true! You could totally use the sauté option! But we just prefer to have more space to work with and have a little more control over the temperature. Thank you! And hope you like it! 😊

    Good methods, I would have returned on the veggies to the broth water for 3 minutes pressure to save on dish cleanup. I see you left some broth behind, I would use it all and thicken it with a teaspoon of cornstarch mixed with water. If you sautee the bagoong with onion garlic and tomato its better, that purple straight from the jar way is way too salty and **In Gordon Ramsey Voice:** "It's Raw!"

    What can you use in place of annato seasoning?

      We actually don’t know of a replacement. Annatto powder is mainly meant to add color to the dish. So if you don’t add it, it should be fine because it doesn’t affect the taste, just the look.

    Where can you get Annatto powder?

      You can usually get it at any Asian grocery store. Sometimes it’s also labeled as “Achuete Powder.” Hope that helps! 😊

      You can also purchase Annatto seeds and simply crush or grind them yourself. They crush extremely easily.
      I use Annatto so much with pork, chicken, and shrimp that I should probably just purchase a pepper grinder instead of using the mortar. The powder can also help accentuate sauces with chili's and make them look spicier than they really are. It's a good trick if you want everyone to be aware that the sauce is a little spicy but you aren't adding enough red chili's or powder to make the sauce glow.

      We both grew up saying it Kah-ree Kah-ree (kapampangan pronounciation), so it was a bit of a struggle saying it the Tagalog way lol. Hats off to you for noticing the slightly awkward pronunciation! 😂😂😂
