I remember when I was working near St-Laurent street at a corner store ( on St-Dominique), Dave would come in (and he was twice the size back then) with his dirty apron looking for produce because he'd just run out. I think he was working for The Globe or Le Blanc back then and I had no idea he and Fred would become as big as they are now.
These guys know how to prepare food. You can see they're not wannabe chefs that just want a cooking show, they make real food meant to be eaten with passion.
These guys look great! Loving the weight loss! Obvi the food content is on point, as per usual. My best friends and I flew to Montreal just to eat at Joe Beef. Totally worth it!

Not only are these two gentlemen incredible chefs that are VERY well respected by their peers, Their knowledge about fine dining and the culture and everything that it entails is surpassed by no one. These two could easily teach a Master course on gastronomy at ANY leading university in the world.
These guys are great. The dry humor and thoughtful explanations are in perfect balance. Munchies needs more chefs like these, vs. hipsters from Brooklyn making "Southern Inspired" terds.

Often with pork and game something you could hunt. Like ground bear or venison. Would make enough to last through Siberian winter and cold travel with hunter sack you have everything in it that's your main your soup or chaser for vodka . Beautiful take on with lobster and Amazing that you kept its truly traditional shape . I believe those are Siberian. There are also Uralian and Altay!
My wife is Ukrainian she makes Pelmini all the time, and I'm Canadian, I don't really feel the Quebecoise essence in this dish, but good job overall, what's not to love? it's Pelmini and Lobster with a nice sauce from the shell, bravo dish, but not Quebecoise cooking during the apocalypse.
Oysters are all over the Mediterranean, and so are lemons! This is also the case on the Moroccan Atlantic coast. they have some of the best lemons and oysters. What are you talking about?
Joe Beef is one of Canada's best restaurants. They're not just focused on beef, matter of fact the Beef in 'Joe Beef' references an actual person. Do a little research and the restaurant and the guy it's named for will be worth the effort.
What about oysters and Yuzu? That’s definitely found in japan, and a very close relative to lemon. I don’t understand the logic. Just because it doesn’t come from the same area, doesn’t mean they can’t work. There can be substitutes for everything that can work.
