I don't understand how the grid at the beginning works. What does it do?

The tic-tac-toe grid helps you scale your subject to the size of your canvas. Also, the places of greatest contrast in your painting should occur near the intersections of the lines. Following this placement will help you keep the viewer's eyes from wandering off the painting.
