I had a birthday while working in Manhattan in the late '70s and the thoughtful boss took us all to Yonah Shimmel's for tea and stuff to have a nice time together. Never had I or have I eaten such fine and delicate things. Even a bagel was so different there and such a wonder. I loved NYC. Greetings from Paris where I now live. Oh, my French spouse did not like cart knishes but he went insane over dirty water dogs. With ketchup. Totally exotic for him!

A friend, many years ago, introduced me to Jewish food, pastries, and especialy matzo ball soup and knishes. I am Portuguese. Since then, my grandkids, and great grandkids have been introduced to all these things. Yum. I have always wondered how they were made. Now I know. I make matzo ball chicken soup. Thanks.

No matter how many times i try, i cant get my knishes to turn out well. Please tell me how do i turn the little black squash balls into centipedes without the magic and the mystery? I can't find it in my nearest tesco, and that really annoys me.
As an added note, the knish bakery may very likely not be there any more for 2 reasons (this video dates back to 2011): first of all because of the carona virus many Lower East Shops shops have closed permanently. Secondly, because many of the residents of the Lower East Side have been leaving the neighborhood while China Town (a neighborhood in Manhattan right next to the Lower East Side) has been becoming larger within the last few years so, again, a number of the original shops have been taken over by the new residents.
I have been looking for a good recipe for Knishes. I do not find many great ones already made in Boise, ID. Thank you, I will try your recipe and let you know how I like the knishes. Do you know if Mrs. Stahl's Knishes is still in Brighton Beach? I know it is Little Odessa, but was hoping she was still open for business? Thanks

Daniel, other than Gabila's, do you know of any other knishery's that make square knishes? Im farther north NY and I used to get Joshua's, but I cannot find them now and (sorry) I'm not crazy about Gabila's (too wet and crumbly when I cut into them)

We make a stuffed bread with potato, we don't bake, but put filling inside dough ball, roll it out thinly then cook on hot griddle with little oil or ghee on both sides. Call it aloo Paratha

So, I have been studying the Jewish culture and customs and looking toward to make a smaller batch of knish for us in the near future. My question is, I have seen knishes made layering the dough over itself, is it any better making it thinner and layering?
Rolling the dough very thin is good and have the extra layers. There are loads of variations on the dough, so you can check that out online. Fillings are whatever you want but potato and onion is my favourite (you can also make filling with very well sautéed mushrooms and onions and potato).
Gimme a potato knish, throw in a pletzel, a strawberry for later...put some mustard in the bag... Yonah Schimmel's in the 60s....a dark little bit of heaven on the lower east side....
Could not find a recipe at leitesculinaria.com for knishes, but I did find another potato recipe that sounds and looks good on the screen: potato piroshki. I happen to love knishes and have yet to find them here in Israel so I hope to make them soon.
do it in a food processor,,until it becomes a cohesive mass,then lightly knead,,to a ball,let relax,,then roll to rectangle,,about 2mm thick,,with plenty of flour,, Place in fridge on steel tray covered with oiled baking paper,,dough will firm up,,stopping filling pushing on dough as you roll it,,,,,,,,,,,,
i need more instruction on how to make them without a stand mixer-i have a Cusinart processor with a dough blade -will that work-i seriously dont know ( just got the food processor and dont know how to use THAT either) im tired of spending money for Gabila's knish and want to try making my own
Knish or as we British scooby doos call veggie pasties......... In you want some in London go to Brick Lane in the East End, same for your bagel fix, salt beef sandwich you got to go to Reuben's in Baker Street for that. Get some!.

Rolling the dough very thin is good and have the extra layers. There are loads of variations on the dough, so you can check that out online. Fillings are whatever you want but potato and onion is my favourite (you can also make filling with very well sautéed mushrooms and onions and potato).
