Had this my first time in Rome! I was shocked by the color at first but the taste was immaculate.😋I even met my best friend in the very same restaurant. Sadly no longer with us.
You didn't have this because no self respecting cook would prepare the meal anything like was done here. Store bought pasta, seafood way way over cooked, cherry tomatoes not cooked... I mean, throwing in the onion and garlic at the same time? Chopping the parsley to dust... That kitchen "prep knife"... Pfffffh, it get circumcised??? 🤣 Taking the heads off the prawns, SERIOUSLY?! Do you realize how that adds to the presentation and the ability to suck the goodness inside out?? No, You don't have a clue. I mean, you don't have to boil the calamari DO YA first, when you cook them 20 minutes with the "shrimp" because those aren't "prawns" anymore... They SHRIMP that could hold a door open or play hockey. 🤣 Might make a great spare tire, cuz they tuff. Definitely ain't "fresh" anymore. This was how someone whose never cooked in their life well, cooks. Plain old dry, nothing on them, store bought black licorice is what your "pasta" is now. Like the "See Food" cuz you boiled the A straight out it... This is an insult to squid ink pasta. Anyone following this has been cooking about 10 minutes to 10 months and the 10 month crowd is now unteachable. 🤣😭😭😭😭😭😭😂 I mean this shit goes to show you. People will watch damn near anything happen. Even a burning at the steak, I mean stake of perfectly good ingredients.
Just a suggestion: cook the pasta earlier, put the tomatoes earlier. Seafood at the end so it’s not rubbery. Use pasta water and mix the pasta with the sauce before serving.
i think that is the reason why he cooked the seafood a little bit longer. trick in cooking seafood or beef meat to make it tender is either cook it quick or longer than usual but not in the middle.
I will stir fry the prawns and squid and set aside .cherry tomato when really cook add all ingredients .then th boiled squid pasta aldente just 1-2 min.add the pasta turn off the heat add all the seafood before serving
Awesome recipe! I would have cooked the pasta a little bit before, and used instead of plain water some water that the pasta boiled in... also seafood tends to be somewhat chewy if you cook them to long, so I would skip boiling them in water after simmering them with the veggies and wine.... Thanks for your feedback. It is a very good thing to add some starchy water from the pasta to the sauce if you see that it is a bit dry. Many just toss the seafood for a few second in the pan but we usually cook it for 3-4 minutes in total. The quality of the seafood is also very important. Hit us up with the results. Hi. Thank you for the kind words and we are happy that you want to try out the recipe. Regarding your question about using a substitute for white wine we can safely say that there is none. You can decide to not use it but we definitely recommend it because the earthiness of the wine enhances the flavors of the seafood. The color of the wine is just a matter of taste. Usually white wine is used for white meats (fish, chicken etc) and red wine for red meat (beef, pork, etc). Also the red wines are more robust in therms of flavor. Now back to this dish just keep 2 things in mind. Cooking seafood can be done in 2 ways to ensure you get the best results. You can either cook it for 2 minutes or low and slow for at least 30-40 minutes to be sure that it isn`t chewy. Take care and happy cooking

@@jeffhansen9081 they are crushed italian red peppers, they have a fruity flavor with a bit of hotness. but you can use any kind of peppers. a bit of hotness elevates the food :)
I love eating squid, but squid ink is something I just can't get around. I've got no problem with eating cattle and pig brains; heart; thymus you name it. I am also diggity down with deep fried and breaded bull testicles aka Rocky Mountain Oysters. Chocolate dipped cicadas are outta this world! I've even eaten deep fried tarantulas...and they are freaking delicious! But I just can't get past squid ink. It's a mental block.
Yeah we understand your point. It is a mental block thing but it is worth trying it. If the pasta is made with squid ink is still better then other dishes where it is poured inside the dish because the pasta takes in a small amount only and the squid ink is very bitter if used in larger quantities.

Habe ich ausprobiert und es hat einfach super lecker geschmeckt. Ich habe es aber abgewandelt und mit Lachs und Garnelen gemacht. ❤

That is most likely the liquid from the stomach. Many cook and eat the head too but we are not a big fan of that part.
