Baking Vlog: Healthy Snack Meal Prep for the week under 1 hour 🍪

  • Come along with me on this chaotic baking vlog where I challenge myself to bake/ make 3 healthy snacks in under 1 hour.... spoiler alert it only took 50 minutes!!
    Recipes below:
    Chickpea Choc Chip Cookies
    Ingredients
    1 can (400g/15oz) chickpeas, drained and rinsed
    1 large egg
    1/3 cup peanut butter or almond butter (or tahini for a nut-free option)
    1/3 cup maple syrup
    2 tsp vanilla extract
    1/2 tsp baking powder
    1/4 tsp baking soda
    1/4 cup plain flour
    1/4 tsp salt
    1/2 cup dark chocolate chips
    Method
    1) Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
    2) In a food processor or blender, combine the chickpeas, egg, peanut butter, maple syrup, and vanilla extract. Blend until smooth and creamy.
    3) Add dry ingredients: Add the baking powder, baking soda, plain flour, and salt to the mixture. Blend or stir until well combined.
    4) Remove the blade from the food processor (if used), and fold in the chocolate chips with a spatula.
    5)Use a tablespoon or cookie scoop to drop portions of dough onto the prepared baking sheet. Flatten slightly with the back of a spoon, as the cookies won’t spread much during baking.
    6) Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. The cookies will still be soft but will firm up as they cool.
    7) Cool and serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
    Apple Cinnamon Muffins
    Ingredients:
    1 ½ cups plain flour
    1 tsp baking powder
    ½ tsp baking soda
    1 tsp cinnamon
    ¼ tsp salt
    1 apple, grated (e.g., Pink Lady or Honeycrisp)
    1 ripe banana, mashed (~½ cup)
    2 eggs (or flax eggs: 2 tbsp flaxseed + 5 tbsp water)
    ⅓ cup coconut oil or olive oil
    ½ cup apple puree or unsweetened applesauce
    1 tsp vanilla extract
    Method
    1) Preheat oven to 180°C (350°F) and line a muffin tin with cases.
    In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
    2) In another bowl, mix mashed banana, grated apple, eggs, oil, applesauce, and vanilla until well combined. Add wet ingredients to dry ingredients and gently mix.
    3) Divide the batter into muffin tins (about ¾ full).
    4) Bake for 18 -22 minutes, or until a toothpick inserted comes out clean.
    Let cool for a few minutes before enjoying!
    Choc Coconut Bliss Balls
    Ingredients:
    1 cup dates, pitted or 3/4 cup dates and 1/4 cup of sultanas
    1 cup shredded coconut (unsweetened)
    2 tbsp cacao or cocoa powder
    1 tbsp chia seeds
    1 tbsp hemp seeds
    1 tbsp of cashew butter/ spread (or any nut butter of choice)
    1/2 tsp vanilla extract
    1 tbsp coconut oil
    1 scoop of protein or collagen powder (optional)
    1 tbsp water
    Extra shredded coconut for rolling
    Method
    1) Add all the ingredients to a food processor/ blender and blend until well combined.
    2) If mixture is too dry, add 1 tbsp water to help bind.
    3) Roll into bite-sized balls and coat with extra shredded coconut.
    4) Chill in the fridge for at least 30 minutes before serving.
