Banana Zucchini Nut Muffins (Vegan/Gluten Free/Nuts Optional):
WET ingredients:
3 ripe bananas, mashed
1 medium zucchini, large grate
1/4 c fave nut butter
1/4 c healthy sweetener (monkfuit, coconut sugar, allulose, etc.)
1/2 cup plant based milk (add more little by little if needed)
2 tsp ACV (apple cider vinegar)
2 tsp vanilla extract
DRY ingredients:
1.5 c fave flour (I did 1/3c each buckwheat, cassava, & sorghum + 1/2 c millet flour*)
3 scoops plant based vanilla protein powder
cinnamon to taste
1 tsp baking soda
2 tsp baking powder
1/2 cup chopped walnuts or pecans (optional)
*blending flours lets you get the best qualities of each, but you can simplify if you only have 1 or 2 different flours available
DIRECTIONS:
Preheat oven to 350 degrees Fahrenheit.
Mix all the dry ingredients in one bowl. Then mix all the wet ingredients in a separate bowl.
Combine the wet and dry ingredients together and mix until well combined.
Pour into lined baking cups and bake for 25 - 30 mins (mine were perfect at 28 mins).
