My dad loved to make us all types of Szechuan dishes during every festival, I gotta say the boiled fish and some kind of red braised pork IDK how they say in Chinese were beyond perfect, he was an airplane engineer but he cooked better than my mom, got the talent from his parents, neither of whom was a professional cook but they were really really into making artistic dishes. My dad even once thought about starting a restaurant after retiring.

I can't remember exactly when but there was this Foochow style restaurant right across the street that served red braised pork and it had this unforgettable taste. And I remember that city isn't even known for red braised dishes so I suspect the cheft stole techniques form a Szechuan master. Hehe

It is difficult to eat a meal without Rice!
Sichuanese people actually hate rice, was raised by one,I'm not sure if it was just my family but I don't remember having any rice in any dishes as long as my dad was preparing the meals. First time I tried out Taiwanese hot pot during a trip to Taipei I was surprised they offered rice coz there's no rice for Sezchuan hot pot as far as I can tell. I never knew rice belonged anywhere in hot pot.
