- In today's video Jill teaches you how to bake super easy and super delicious Pumpkin Pecan Scones.
I always bring you recipes that are great for the beginning or even semi-advanced home cooks and bakers -- We're all home cooks, right? The recipe appears below:
Jill’s Pumpkin Pecan Scones:
2 cups unbleached flour
1/2 cup firmly packed light brown sugar
1 ½ teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
3/4 teaspoon baking powder
1/2 teaspoon baking soda
Pinch of salt
1/2 cup cold unsalted butter, cut into pieces
½ cup finely chopped nuts (I used Pecans)
1/3 cold buttermilk
1/2 cup fresh or canned pure pumpkin puree (no spices or sugar added)
1 teaspoon pure vanilla extract
Preheat your oven to 400 degrees F and place the oven rack in the center of the oven.
Line a baking sheet with parchment paper.
In the bowl of a food processor, whisk together the flour, brown sugar, spices, baking powder, baking soda, and salt.
Cut the butter into the flour mixture with a pastry blender, or your food processor. The mixture should look like coarse crumbs. Add in the chopped nuts by hand or spoon. (Don’t use the food processor blade to mix them in or they'll turn to powder.)
In a separate bowl, mix together 1/3 cup buttermilk, the pumpkin puree, and vanilla. Add the buttermilk/pumpkin mixture to the flour mixture.
Mix just until the dough comes together. Add more buttermilk if needed. Do not over mix.
Transfer to a lightly floured surface and knead dough gently until the dough comes together. and then pat the dough into a 7 to 8 inch circle.
Cut the circle in half, then cut each half into 4 pieces, and then again, to make 8 pie-shaped wedges (triangles).
Place on a parchment or baking sheet liner. Bake for about 20 minutes or until golden brown and a toothpick inserted in the middle comes out clean.
Transfer to a wire rack to cool. Makes 8 scones.
Optional: Make a glaze and drizzle it on the cooled scones.
Drizzle: ½ cup powdered sugar, a touch of vanilla, ½ tablespoon or more of milk. Start slow with the milk. (You can always add more milk) Add more milk if needed until the drizzle is easy to pour from a spoon. For a quick pastry bag: You could also pour the drizzle into a plastic sandwich bag, snip the tip off the bottom corner of the bag, and drizzle away

Thank you, Jill for sharing such a wonderful recipe. I will enjoy with tea indeed. I love pumpkin. God bless you. Love from Ky Subscriber. 🍵♥♥
Hello TamsonD! So good to see you. I'm hoping all is well in Kentucky. Thanks for watching -- I think you'll like the recipe. It's a wonderful item for the holidays.
Hi Jill, I'm in Perth, West Australia. I really enjoy watching you cook and trying your recipes at the end. Cheers from Lorraine.
Hello Australia! I'm so happy you're visiting. I have a friend in Melbourne. Thanks for watching, and I hope you'll give the recipe a try
Another winner from Jill. Delicious! A bit hard to mix but well worth the effort.
It's a good recipe. I agree. It was a bit stiff to work with, but the scones were quite tasty
Jill - I've missed some episodes but noticed the Director has a new shirt on today! It looks real snappy and Christmassy! The scones look snappy too!
Isn't he just too cute! Thanks for watching. I hope all is well.
Love Scones ❤
😊👍
Thank you!😊
You're welcome 😊
Jill, you are looking fabulous! This recipe looks 😋. Can you use Cassava flour in place of all purpose flour? Would you do a baking segment using Cassava flour? Also, looking forward to some Christmas decorations behind ya. 😉 Have you two been watching veteran movies for veteran's day this past week? Have you seen critically acclaimed, 'The Best Years of Our Lives' with Dana Andrews? A must see.
Hello Semi -- I've never used Cassava flour and know nothing about how it works in recipes. So I'm not sure if you could sub the flour out for the Cassava. I don't think I'd probably do a segment on it. But, thanks for the suggestion.
Christmas decors in the kitchen. I don't know about that -- I don't have a Hallmark Christmas Kitchen where I always tell Randy, "Someone vomited Christmas all over that kitchen! 🙂 But I'll try to put some festive items in the background.
I'm not sure if we've seen the Best Years of Our lives. I really like Dana Andrews. We most definitely will seek it out. We love old movies.
Thank you for the recipe Jill. I will grab a can of pumpkin and some brown sugar from the store on my next trip. Can I substitute whole wheat?
Hi! Thanks for watching my video. I would suppose you could use whole wheat. Your scones might turn out flatter. I'd be interested to know how they turn out if you do use WW.
Do you have a cook book?
Hello. No, I don't have a cookbook. I'd love to write one. It's a huge endeavor. Thanks for watching, and for your question
I just saw ur channel yummy stuff : ckn. Out ur recipes
Thanks and welcome
