In this video, I make the Chinese chilli oil at home in India. The hot chilli oil is a condiment and predominantly used as a dip or seasoning sauce. You could eat dumplings, noodles, tofu, rice, meat - basically a wide variety of Chinese dishes with it if you are so inclined. It is also commonly used to cook dishes with, especially in the local cuisines of Sichuan and Shaanxi provinces.

Admittedly, we the Chinese do not eat our food with the hot chilli oil too often because it is, as the name suggests, very hot! However, considering that many Indians love hot and spicy food, this sauce/dip could be right up their alley. My husband and in-laws eat Idly and Dosa with it sometimes. I hope you like it, too.

The Ingredients:
• Dried red chillies (without the stalk): 40g
• Sesame seeds (white): 6g
• Salt: 2g (or to taste)
• Bay leaves: 3pcs.
• Black pepper: 3g
• Cinnamon sticks: 3g
• Vinegar: 2 tsp.
• Oil: 100ml
Feel free to tweak the proportion of each ingredient slightly to suit your taste.

Additional Information:
• Make absolutely sure to allow the oil to cool for 2-3 minutes before pouring it over the mix. If the oil is too hot, it will burn the mix and turn black.
