Definitely spots. They school up and migrate in the fall. Those “popeye” mullet (or striped mullet) are commercially caught here in NC primarily for the roe, which have an asian market. That fish was once caught and placed in barrels and preserved with salt so folks had food thru the winter. They would remove and soak overnight in water to make them palatable. Mullet are a very healthy fish to eat due to fish oil. Some people remove guts, leave head and scales, grill them belly down. I prefer filet and fry. Not much meat though. All head and belly. The spots on the other hand….scale, dehead, gut, score, bread and fry. A seasonal delicacy. They freeze well also.. in water.

It's better to eat them fresh than soak overnight. Bleeding helps. It also helps to trim the bloodline and if you push the filets inward it pushes up the bloodline to make it easier to trim accurately.
The other fish are Spot and you had some nice ones. They taste like Croaker.

I have snatch hooked mullet many times when I was young in Brevard County FL where I was born in 1957 and raised till I moved to Houston TX in early 1976. Here in NC where I live now we net them mostly I like mullet fried or smoked the row is also very good fried if you like the taste of liver as that is what it tastes like to me. The other fish you was snagging up here we call them spot it is basically a spot tailed croaker also very good to eat fried in my opinion.

Congrats on the baby girl! Back in the day, I used to work for Scale Company. On the westside of Florida. There was a small town, don't remember the name of the town. That they would call us to come down to repair and calibrate their scales. This was when the mullet were running. The boats would bring in 100s of lbs. of mullet. The funny part was they wanted the roe out of the fish not the fish them self'. The roe is the egg sack. It was sold over seas to Japan and other places. By the time it got to Japan it was 30 to 40 dollars a lb.. The fish it self was sold as crab bait. For two dollars or less a lb.
