The video is basically being cropped to a smaller frame window and focused on one area. When there is a lot of movement, especially pivoting up, down, left, and right, the perspective of certain things are going to change between things closer and farther away. When a software stabilization like this is used to a certain extent to keep everything in one small focused frame, you will see the change in perspective if the frame is either to focused or moves too much. The iPhone would have the exact same issue if it were stabilized to the same degree.
