  • Lamb Kofta! Is it Turkish? Persian? Arabic? Who cares? It’s delicious! Definitely get on board when you next fire up your BBQ. Serve in wraps with salad, or on their own with a bunch of sides - your call. Either way, they’re the bomb.
    For the Kofta:
    1kg ground lamb
    I fine diced red onion
    1 level tsp of:
    Garlic powder
    Pepper
    Thyme
    Rosemary
    Fennel seed (we forgot this in the video - but definitely add it)
    1 heaped tsp of:
    Salt
    Smoked Paprika
    Cumin
    ½ tsp Cayenne (or more if you want a kick)
    2 tbs pistachio kernels, chopped
    ½ cup parsley
    ¼ cup mint
    Handful spring onion
    Splash olive oil
    For the Yogurt:
    300gm yogurt
    1 clove garlic
    Level teaspoon cumin and smoked paprika
    Juice half lemon
    2 tbs mint (dill and / parsley also works great)
    Salt/pepper pinch
    For the slaw, we went with a mix of:
    Red cabbage
    Fresh fennel
    Carrot
    Mint
    Pistachio
    Red and green onion
    Dressed with red wine vinegar, Dijon and olive oil
