Ultimate Beef & Vegetable Soup by The Cajun Ninja

    BEEF & VEGETABLE SOUP
    2-3 lbs of Beef Stew Meat
    Kosher Salt to Season Beef
    Black Pepper To Season Beef
    1 Onion
    1 Bell Pepper
    6 Cloves of Garlic
    2-3 Baking Potatoes
    3 Sticks of Celery
    3 Carrrots
    1 lb Green Beans Snapped
    1 Head of Cabbage
    1 Handful of Fresh Parsley
    1 (8oz) Pack of Sliced Mushrooms
    1 (32 oz) Container of Beef Broth
    2 (46 oz) Bottles of Tomato/Vegetable Juice
    1 Tablespoon of Cajun Seasoning
    2 Bay Leaves
    1 (12 oz) Bag of Frozen Corn
    *optional*
    1 Package of Sea Shell Pasta
    Start out by heating a large pot over Medium heat.
    Season the beef stew meat generously with the Kosher Salt, and Black Pepper.
    Chop the Onion, Bell Pepper, and Garlic.
    Add the vegetable oil to the large pot and let coat evenly.
    Drop the Beef in.
    Cook the Beef until you see hardly any pink left.
    Remove the Beef, placing it into a large bowl off to the side.
    Drop in the Onion, Bell Pepper, and Garlic.
    Sauté the Vegetables for 25 minuets.
    While the chopped Vegetables are sautéing, cut the Potatoes, Celery, and Carrots into large pieces.
    Also prep your Green Beans by snapping the ends.
    Fine chop the Parsley.
    Chop the Cabbage into large pieces, removing a portion of the white center. Set it all off to the side.
    Be sure to periodically stir your pot.
    Once the sautéed Vegetables are soft, add in the 32 oz container of Beef Broth.
    Next add the two 46 oz bottles of Tomato/Vegetable juice.
    Add the cooked Beef back in.
    Add in all of the fresh cut Vegetables.
    Add the Tablespoon of Cajun Seasoning and two bay leaves.
    Bring to a boil, cover, lower to simmer, and cook for 1 hour.
    After the one hour mark, pour in the bag of frozen Corn.
    Bring back to a boil, cover, lower to simmer, and cook for another hour.
    If you choose to have pasta, with about 40-30 minuets left, begin boiling a pot of water, and cook the pasta according to the package directions.
    Add your desired amount of pasta to your bowl and enjoy.

    I hadnt had this soup since my dad passed 4 years ago. I never got the chance to learn the recipe from him. This recipe tasted EXACTLY like his when i did it. THANK U for teaching me how to make the soup i thought id never have again! I am forever grateful for this!

    Made this yesterday and added some beef short ribs (per commenters on Facebook.) We had some family over who said it was the best ever. It doesn’t beat my dads recipe, but it’s a delicious different take!

    Just made this!!! It came out SO good! I didn’t have v8 juice so I had to make my own tomato juice with the tomato sauce I had and it still was so yummy!

      Random, Family Man yeah we get up to 120f (or that’s how it feels because of the dew point, according the weather man) during August. Hot soup on days like that would make you melt! So good on a cool day, though.

    I’ve never heard of using cabbage lol but I can’t believe you measured the Cajun seasoning lol you know our ancestors tell us when to stop seasoning haha.

    Tried the recipe. It was a big hit with the family. We added jalapeños to the sauté vegetables. Used brown and red potatoes too. Came out an absolute delight. Meat wasn’t as tender as I would have hoped. Any suggestions on how to make the meat super tender?

      @@athenatzuanos4538 No the tomatoes just blend in to great a different flavor profile. If you don't like tomatoes this shouldn't bother you. Just to be safe only use half of the recommended amount of tomato juice, you'll love it.

    looks great!!! we have always used v8 in a lot of our soups has much better flavor cant wait to try this soup. my wife isn't a fan of bell peppers would it kill the soup if I was to leave that out? I hate asking and hate changing a recipe but shes like a little kid when it comes to stuff she doesn't like lol

    Make mine sorta like it. No cabbage for sure. I also add a lb of ground beef and if u can get your hands on it, deer sausage. And special recipe- V8 spicy.... use 8 8oz cans. It’s really not spicy due to water from veggies, but adds an awesome flavor... great recipe my fellow Cajun.

    Great looking cast iron pot. The soup looks awesome. What can I use if I don’t have Cajun seasoning as I live outside the USA. Thanks.

      Ingredients
      1 ½ teaspoons onion powder
      1 ½ teaspoons garlic powder
      1 tablespoon seasoning salt
      1 tablespoon paprika
      1 teaspoon ground black pepper
      1 teaspoon cayenne pepper add more if you like more heat
      1 teaspoon oregano
      1 teaspoon thyme
      1/2 teaspoon red pepper flakes optional
      Instructions
      Combine all ingredients in a small bowl.
      Store in an airtight container up to 6 months.
      This isn't mine but it's a pretty good substitute.

    I also add lentils or split peas at the beginning as a thickener. Also, i add tomatoes, peas and corn. I love cabbage in the soup.

    I'm in the process of making this soup. My house smells so good. I underestimated the size of pot to use and had to move everything to bigger pot. I just wish I could use "Gumbo the Wonder Dog" to help with cleanup.

    Yummmmm! Perfect weather for beef stew right now. Great idea to add spicy V8. Never would've thought to do that. I add it into the meatloaf & it adds great flavor.

    What kind of tomato juice do you put in it? Like v8 or is there a certain brand? I’ve never made this before and it was my moms favorite to make for my dad so I want to make it for my dad since my mom past almost 2 years ago

    I advise adding some rotel and no tomato juice. Use stewed tomatoes, and diced tomatoes. If you do not wanna peel the potatoes, the canned sliced potatoes are really good. I also use elbow macaroni but cook it on the side. add it last to prevent season absorption. I also add some white zin wine. Maybe 6 ounces. The alcohol helps the veggies absorb flavor. I sell this soup at a flea market. Its popular.

      King Sixx Sounds good to me! I’d probably pan sear it a little and then let it cook down for a couple hours!

    I got a question. I'm about to make this for first time. I have everything exept mushrooms. But I noticed I have hamburger meat that's about to go bad. Would it hurt to add ground beef to this soup as weel as stew meat?

      He used V8-Spicey blend. Google it, so you will know what the bottle looks like in the store.

    I hadnt had this soup since my dad passed 4 years ago. I never got the chance to learn the recipe from him. This recipe tasted EXACTLY like his when i did it. THANK U for teaching me how to make the soup i thought id never have again! I am forever grateful for this!
