I love eel. I find it more delicate than fish. Here in New Zealand, we have the Longfin Eel. I like to prepare it with Manuka honey, soft brown sugar and salt then put it straight in the smoker.

요즘은 양식장 에서 장어를 크게 키우나 보죠? 원래 1KG에 4마리가 되면 출하를 시키거든요. 그이상 키우면 생산 단가가 높아져서 이윤이 안되기 때문에 4미짜리가 시중에서 가장보편화 되어있고 장어식당 에서는 손님들 한테 킬로수를 속이고 판매를 하는게 오랜전통이 되었습니다.
