I work late nights in front of my computer, and very often I'll be having tea as I work. I find that if I have coffee the energy comes in too quickly and I get jittery, and very quickly it goes away. Tea helps me keep focused for the several hours I work for.
I thought the quality of this video was good, until the moment he recorded himself on a scooter with a passenger while keeping himself in the shot the whole time. Amazing! This guy is an entire research team and camera crew!

Oh thank god. I knew that green/white tea myth could not possibly be true. Logically it just made no sense, yet I saw it everywhere! My mind is now at ease.
I really appreciated this information. I cut out caffeinated drinks because they caused my blood pressure to spike and migraines. I noticed this effect when drinking coffee (robusta mostly). After cutting caffeine out, my blood pressure returned to normal. I am encouraged to think that it is safe to reintroduce small amounts of tea from time to time without having to worry about an adverse reaction. Thank you.
Across the world, we are replacing tea with coffee because of heavy marketing and proliferation of "café". Let's hope we return to tea and the beautiful tea rooms in near future with this wisdom!

Hey Alex, This does not make any sense. Given the same variables (amount of tea, water, temperature) a longer brew will extract more caffeine. I have not seen any study comparing the amount of caffeine from a 5 min brew vs 20x 15 second brews. Maybe this is their meaning? BTW I am up for that collab if you want to explore then please email!
I think it related to the fact of the tannins binding caffeine. If you brew longer you get more tannins taking off the caffeine effect, but you also get more caffeine on the other side.

Good that tou mentionned kukicha cause Thats a really good Tea and its really cheap according to its quality.So I want people to try that. Hujicha (wich is often are made of kukicha) is another excellent evening Tea! Its good to inform people about this because a lot of people get the wrong information as you mentioned about the amount of coffein in black,green etc. We Have Made it too easy for us in the west!
One reason why people think caffeine is so bad is energy drinks. About half of them in the US have 300+mg per can. I work with people who drink 4 or 5 cans a day and complain about high blood pressure and heart palpitations. On top of that, it's not a naturally occurring caffeine so your body can't process it as well.

I'd love to see you guys do a blind taste comparison with different sources of water on the same tea, such as tap vs. spring vs. filtered vs. distilled vs. bottled, etc. I've heard a lot about how important the kind of water is with tea brewing, so I'd love to see what you guys could conclude about what it does to the taste.

I am currently drinking some of their guangxi silver needle... I'm not going to try and describe flavors because I don't have as developed palette as most and I wouldn't want to mislead you, but their tea is very delicious and to me it is worth the premium price... if you're on the fence order one of their flight boxes... they're reasonably priced and you get an assortment of tea. It's a great entry point to decide what best suits your taste too!
I believe it also has theanine. I've been drinking tea gong fu style daily for years. Once I decided to try Yerba Mate. I drank it in a gourd with a bombilla all day long. I did this for about a month. Initially I loved the taste and the way it made me feel. It gave me way more energy than tea and honestly I felt great.(at the time) But then I realized that the month had gone by in an instant. No joke. It's as if it literally sped up my life. So I went back to tea and life slowed down again. I am not a fan of Mate and I view it as an addictive drug almost. I felt great at the time but it really messed me up. Just my personal opinion and experience. It's probably worth noting I have extreme anxiety, some PTSD and depression when the PTSD kicks in. I take no pharmaceutical drugs. Tea is the only medicine that I use. It calms me down when I need it and keeps me mentally strong. So I probably shouldnt have tried Mate to begin with.( if it ain't broke. Dont fix it.) Sorry for the long comment. I just wanted to share my experiences. Have a nice day.
Guayusa is an interesting alternative as well. Similar to mate, it has caffeine and is said to have theanine as well (I don't know if this has been confirmed). For me it has a much milder effect than mate. Doesn't taste as good as tea though!
GoneKiffen that's very interesting. I wonder if it's just the caffeine levels that weren't working for you, or if there's something else in mate that was responsible. The theanine content is pretty cool, and mate also has some theobromine (of chocolate fame). Not sure if guyasa does (seems to be much less researched), but that one is also a solid functional drink.
Anything with caffeine gives me anxiety......drives me crazy. Excellent video!! For years everyone would tell me no caffeine in tea. But, I'd keep trying different teas an most of time I'd feel it. Other times not so much.....I thought it was me. Great information!

I don't know if anyone else has mentioned this but just wanted to share: roasting coffee does impact the caffeine, light roasts are higher caffeine and dark roasts have a lot of the caffeine removed in the roasting process (source: husband works at a coffee roasting facility). Now I'm off to watch more of your videos!

Hey Don! Great stuff here! I fell in love with tea many years ago and actually worked in the industry for a few years. This video hits home because the passion that I have for tea (which you understand for sure) is coupled with a caffeine sensitivity which, if I'm drinking tea, must be consumed in small amounts (half cup or less) at specific times of day (roughly 7am and 2pm). If I stray from this routine I will encounter headaches and moodiness. I've been on and off tea for the last 10 years and have always been trying to figure out how to continue my love of tea without the adverse affects of caffeine. BTW your videos are fantastic!

So far for me different types of tea and farmers and batches have been similar to Cannabis strains. Some can cause panic or anxiety, some are too heavy, and some are just splendidly useful. Great video!

I'm very sensitive to caffeine, I have a rare heart disease and stay away from high caffeine drinks. I went to the hospital with just one cup of coffee accidentally brewed in the decaf pot where I was eating. Crazy as it sounds, my sensitivity increases without a small consumption of caffeine. So I drink tea. Some times it bothers me. But with your guidelines, the best I have ever seen. I now know why sometimes it bothers me. keep on reporting. I am now on the look out for some non-powdered teas of the oolong (spell?) type.

I love your content, this was another great video. I'll add a personal comment. From my experience (and a study that I read), it's not just that "Higher Temperature = Higher Caffeine", but I believe it's "Higher Temperature = Caffeine Extracted Faster". A cold steeped tea can have a lot of caffeine too, it just takes a lot longer. I don't *believe* there is a threshold whereby a certain temperature is required to extract some of the caffeine; it's just a matter of speeding up the extraction. Of course, this does mean that if one isn't deliberately attempting to extract all of the caffeine from their leaves, over enough steep time or multiple steeps, that higher temperature will effectively mean higher caffeine. I could be wrong about this stuff though! Cheers.
I just stumbled across your channel, trying to educate myself on tea. I learned that caffeine is a big contributor to my muscle pain and stomach trouble and there is so little written about it. Caffeine doesn't just affect your blood pressure and how awake you feel. Just to let you know...
I’ve heard once from a chemist that caffein is actually water soluble at quite low temperatures, even near freezing - and that theoretically tea could be decaffeinated by first steeling in iced water.
I went from 304 lbs to a current 215lbs from eating whole foods and a lot of experimentation with types of work outs. I currently find bicycle riding and indoor rowing to be most beneficial. insomuch as an all body work out and calorie burn. Long story short I am serious about my health and have found that tea is probably more beneficial than coffee. I subbed to your channel because of the serious information you provided. Thank you and I kn ow have found a better use for my French Press until further notice

Quite accurate and comprehensive information. Not very long ago I did some research on regard to this issue and reached most of these same conclusions. I'd never heard of of the modulating effects of polyphenols nor the synergistic effect of caffeine and theanine, though. As a matter of fact, I hadn't even heard of theanine before.

As for the alleged higher caffeine content with longer withering, you can't induce the production of any further caffeine once the tea leaves have been plucked and "killed" (conversely, you could theoretically denature or remove some of its caffeine content). Alternatively, you could increase the bioavailability of its caffeine content, so it would be more readily released into water when brewing the tea. But that's not what they usually measure in the lab when they compare different teas, but rather the maximum caffeine content they can extract by leaving the tea a much longer time in water. E.g., boiling water was poured on tea leaves and stirred for 10 minutes: agriculturejournals. cz/publicFiles/08057.pdf You could concentrate the caffeine content by partially degrading or removing some of the other components present in the tea leaves, such as water, which is one of the purposes of the withering process. But if at the end point of the process all tea varieties have the same water content, the greater water loss during a longer withering phase would be irrelevant. There are other components present in the tea leaves that are degraded during the withering phase. Apparently, chlorophyll begins to degrade, some of the carbohydrates are broken down for use as energy, and the polyphenol oxidase and peroxidase enzymes becomes active, as a result of those degradation processes, some of the volatile compounds dissipate (including CO2). A greater extent of degradation would render a higher caffeine concentration in the remaining dry matter (assuming the extent of caffeine degraded by such processes is negligible).

+Mei Leaf, you failed to mention why caffeine is toxic to insect pests. Does caffeine also block the insects' adenosine receptors inducing in them jitters or anxiety?
I'm sufering from anxiety and panic disorder. so I surely can not drink coffee. and even black/green/ oolong tea can get me anxiety and panic attack. so I can only drink herbs tea and flowers tea. but apparently I have to be careful with rose bud tea. tried 3 small buds and steeped for 5 minutes in a cup of boiled water, and it went fine for me. but today I found out, 4 big buds + 1 cup boiled water, steeped 15 mins (+ 1 tsp honey later when it cooled down), and it got me anxiety and panic attack pretty bad. heart palpitation, disoriented, jittery, stomachache, and finally the most horrific is impending doom (as always). and I thank you I found your vid. this gave me quite clear explanation about caffeine. for I have read an article wrote rose buds still contain caffeine -but I didn't believe it-, now I do. 😌

Great video. I just drink red tea/rooibos in the evenings so I can fall asleep. :) I know it's not actually tea, but it's a good alternative and it's delicious and naturally caffein free.

I'm a long-time tea fan and know quite a bit to begin with, but now that I've gotten a job in a tea shop I decided to up my tea knowledge game.

It's worth noting that yerba mate also contains caffeine (and plenty of it!), not "mateine" as is sometimes claimed. Great work as always Don & co!

Tea is the only medicine that I use. It calms me down when I need it and keeps me mentally strong. So I probably shouldnt have tried Mate to begin with.( if it ain't broke. Dont fix it.) Guayusa is an interesting alternative as well. Similar to mate, it has caffeine and is said to have theanine as well (I don't know if this has been confirmed). For me it has a much milder effect than mate. Doesn't taste as good as tea though!
GoneKiffen that's very interesting. I wonder if it's just the caffeine levels that weren't working for you, or if there's something else in mate that was responsible.
The theanine content is pretty cool, and mate also has some theobromine (of chocolate fame). Not sure if guyasa does (seems to be much less researched), but that one is also a solid functional drink.
Anything with caffeine gives me anxiety......drives me crazy. Excellent video!! For years everyone would tell me no caffeine in tea. But, I'd keep trying different teas an most of time I'd feel it. Other times not so much.....I thought it was me. Great information!

I don't know if anyone else has mentioned this but just wanted to share: roasting coffee does impact the caffeine, light roasts are higher caffeine and dark roasts have a lot of the caffeine removed in the roasting process (source: husband works at a coffee roasting facility). Now I'm off to watch more of your videos!

Hey Don! Great stuff here! I fell in love with tea many years ago and actually worked in the industry for a few years. This video hits home because the passion that I have for tea (which you understand for sure) is coupled with a caffeine sensitivity which, if I'm drinking tea, must be consumed in small amounts (half cup or less) at specific times of day (roughly 7am and 2pm). If I stray from this routine I will encounter headaches and moodiness. I've been on and off tea for the last 10 years and have always been trying to figure out how to continue my love of tea without the adverse affects of caffeine. BTW your videos are fantastic!

So far for me different types of tea and farmers and batches have been similar to Cannabis strains. Some can cause panic or anxiety, some are too heavy, and some are just splendidly useful.

I'm very sensitive to caffeine, I have a rare heart disease and stay away from high caffeine drinks. I went to the hospital with just one cup of coffee accidentally brewed in the decaf pot where I was eating. Crazy as it sounds, my sensitivity increases without a small consumption of caffeine. So I drink tea. Some times it bothers me. But with your guidelines, the best I have ever seen. I now know why sometimes it bothers me. keep on reporting. I am now on the look out for some non-powdered teas of the oolong (spell?) type.

I love your content, this was another great video. I'll add a personal comment. From my experience (and a study that I read), it's not just that "Higher Temperature = Higher Caffeine", but I believe it's "Higher Temperature = Caffeine Extracted Faster". A cold steeped tea can have a lot of caffeine too, it just takes a lot longer. I don't *believe* there is a threshold whereby a certain temperature is required to extract some of the caffeine; it's just a matter of speeding up the extraction. Of course, this does mean that if one isn't deliberately attempting to extract all of the caffeine from their leaves, over enough steep time or multiple steeps, that higher temperature will effectively mean higher caffeine. I could be wrong about this stuff though! Cheers.
I just stumbled across your channel, trying to educate myself on tea. I learned that caffeine is a big contributor to my muscle pain and stomach trouble and there is so little written about it. Caffeine doesn't just affect your blood pressure and how awake you feel. Just to let you know...
You don't know that for sure, you can't just blame caffeine for muscle pain based on a little dabbling research. Stomach pain, yes.

I’ve heard once from a chemist that caffein is actually water soluble at quite low temperatures, even near freezing - and that theoretically tea could be decaffeinated by first steeling in iced water.
I went from 304 lbs to a current 215lbs from eating whole foods and a lot of experimentation with types of work outs. I currently find bicycle riding and indoor rowing to be most beneficial. insomuch as an all body work out and calorie burn. Long story short I am serious about my health and have found that tea is probably more beneficial than coffee. I subbed to your channel because of the serious information you provided. Thank you and I kn ow have found a better use for my French Press until further notice

Quite accurate and comprehensive information. Not very long ago I did some research on regard to this issue and reached most of these same conclusions. I'd never heard of of the modulating effects of polyphenols nor the synergistic effect of caffeine and theanine, though. As a matter of fact, I hadn't even heard of theanine before.
As for the alleged higher caffeine content with longer withering, you can't induce the production of any further caffeine once the tea leaves have been plucked and "killed" (conversely, you could theoretically denature or remove some of its caffeine content). Alternatively, you could increase the bioavailability of its caffeine content, so it would be more readily released into water when brewing the tea.
But that's not what they usually measure in the lab when they compare different teas, but rather the maximum caffeine content they can extract by leaving the tea a much longer time in water. E.g., boiling water was poured on tea leaves and stirred for 10 minutes: agriculturejournals. cz/publicFiles/08057.pdf
You could concentrate the caffeine content by partially degrading or removing some of the other components present in the tea leaves, such as water, which is one of the purposes of the withering process. But if at the end point of the process all tea varieties have the same water content, the greater water loss during a longer withering phase would be irrelevant.
There are other components present in the tea leaves that are degraded during the withering phase. Apparently, chlorophyll begins to degrade, some of the carbohydrates are broken down for use as energy, and the polyphenol oxidase and peroxidase enzymes becomes active, as a result of those degradation processes, some of the volatile compounds dissipate (including CO2). A greater extent of degradation would render a higher caffeine concentration in the remaining dry matter (assuming the extent of caffeine degraded by such processes is negligible).
+Mei Leaf, you failed to mention why caffeine is toxic to insect pests. Does caffeine also block the insects' adenosine receptors inducing in them jitters or anxiety?

I'm sufering from anxiety and panic disorder. so I surely can not drink coffee. and even black/green/ oolong tea can get me anxiety and panic attack. so I can only drink herbs tea and flowers tea. but apparently I have to be careful with rose bud tea. tried 3 small buds and steeped for 5 minutes in a cup of boiled water, and it went fine for me. but today I found out, 4 big buds + 1 cup boiled water, steeped 15 mins (+ 1 tsp honey later when it cooled down), and it got me anxiety and panic attack pretty bad. heart palpitation, disoriented, jittery, stomachache, and finally the most horrific is impending doom (as always). and I thank you I found your vid. this gave me quite clear explanation about caffeine. for I have read an article wrote rose buds still contain caffeine -but I didn't believe it-, now I do. 😌

Yes this is the approximate amount of caffeine in 250ml cup but I guess that it is a similar amount in a 100ml Gong Fu brewed cup.

pooja bhandari hi pooja. It does not make the tea unhealthy but the casein inhibits some of the flavanols which have a antiox effect on the body.
