My mama and my daddy always made it (without any eggs.) It was simply the juice of three (3) lemons, 1 can of Eagle Brand milk and the crust was made with crushed vanilla wafers, sugar and butter (and vanilla wafers all around the edge for decoration, with a layer of whipped cream or Cool Whip on top of the lemony mixture. FABULOUS - YUMMY- a family favorite!

I grew up with Lemon Ice Box Pie and have never gotten tired of it.
This is the best pie ever.
In high school I made this for my Home Ec class and everyone loved it.
If you're reading this and have never tried this yummy, easy to create pie, go for it. You won't know what you're missing until you take your first bite. Then it's bliss on the tongue.

Loved this recipe. My mother used to make a similar dessert. I didn’t have a crust, so I mixed half a cup of fresh lemon juice with a can of SCM, then added 2 cups of frozen blueberries and buzzed it all up the food processor and stuck it in the freezer. My ice cream for the next week, yummm!

I make my pie just like this, just like my Mama did. But, I put meringue on top and brown it, looks so pretty and tastes sooooo good! Also I have always used the raw egg yolks in the pie and the whites for the meringue. I’m 74 and have been eating this way all my life, never had a problem.

I've made this pie for more than 45 years. I use 6 egg yolks to help it set up thicker and bake it at 350-degrees for 12 - 15 minutes. Then, I chill it completely before cutting. It is soooooo good! We actually prefer it with Key Lime juice (bottled is fine!), but lemon juice is good too.
By the way, I use the egg whites to make meringues, which are addictive.

When I was a Kid, my Grandma, used to make these, for our Christmas, at her house. She made a homemade crust, out of Vanilla Wafers, and added Meringue on top. I learned how to make them, and they are still a family tradition, at Christmas time.

If you use whole eggs, then lemon juice, the lemon juice ‘cooks’ the egg. Then add the condensed milk. This will also help the pie to set quicker. Also, turn your lemon with juice side toward the pointed press. And, you’re right. Who doesn’t love lemon icebox pie.

Absolutely delicious! I tried 3 similar recipes this week and this one was by FAR the best. It tasted just like my grandma made. Did a little research and I think it's ridiculous to worry about the egg yolks. And I really think , after trying 3 lemon icebox pies this week, that the 3 egg yolks made the difference. I also tried one w cream cheese and I think you could easily add / substitute here, but the non cream cheese one was the more refreshing. Especially if it's hot out.

This brought back memories from the early 60's. I used to make this pie but my recipe called for the juice of 3 lemons (our lemons were smaller back then) one can of sweetened condensed milk and I 20 oz. can of well drained crushed pineapple. This would fill that crust just fine. Refrigerate until set. Makes a wonderful summer pie, refreshing and no oven needed. Thanks for sharing this recipe. Have a Blessed day.

I add about a 1/2 teaspoon of lemon zest to the lemon juice. Next, I mix together the eagle brand milk with the lemon juice and THEN add in the egg yolks. When I added the eggs first, I always got curdled egg bits.
I use a cup of lemon juice and I put a very sweet meringue on top. I love the combination of the really sour with the really sweet.

    pour into:
    large graham cracker crust
    whip:
4 egg whites with sugar to taste until it makes stiff peaks

I just read some of the replies. The lemon juice “cooks the egg yolks”. Another good pie is the milk, the lemon juice stirred together and then gently add a small carton of heavy cream whipped. It is a lighter pie. Love it in the summer time.

She might have used evaporated milk in her recipe- I remember her beating peaks, no cooking, poured it in a metal ice cube tray (with the "innerds" removed and freezing...no meringue on top, just graham cracker crumbs. Whatever recipe...so good in the summertime. Thank you.
