I'm not sure if they usually do this at GP's but at Pro Tours they also have "card spotters" who stand behind the players and inform the announcers what cards the players have drawn.

The announcers are so boring, They lack feeling behind their words. Plus these videos should be half the length cut out the bs and show the game being played. No one cares about the witty banter you use to fill the boring spots just take the boring spots out. Don't show shuffling or any other time wasters.

That's just not feasible... They stream the GPs live via twitch and do commentary during. If they were to edit out the shuffling and other 'boring parts' for the transition to youtube, you would miss out on the commentary and insight during those periods. It would end up being choppy and incoherent to shave off less than 10% of the time.
