    About This Episode:
    Today we wake up at 5AM in order to catch a boat from Cebu City, Cebu to Bohol, where we are in search of an epic Fiesta. May is Fiesta month on Bohol and everybody is down to celebrate by feasting, drinking, singing and many other fun activities. On this day we try out some amazing lechon, adobo also known as gumba and eel.

    Adobo and Humba are almost the same but for Adobo, there's chicken adobo and pork adobo. For Humba it's only for pork, it's kinda like adobo but more softer. The pork fat looks like a jiggling jelly. And most of all, it is called HumBa because it stands for 'Humok nga Baboy' or 'Soft Pork'. Only Bisaya knows about it. Just saw this video and I'm happy to see you enjoyed the fiesta, Sonny.

    When I was in Philippines and had some lechon, nobody would let a kid go anywhere near the lechon during the cooking process, everyone would yell at any kid that would get close lol. I am very surprised that that kid got to help cook.
    Another great episode, love the cultural experience in this one.

      Someone explained that he doesn't need a sharper knife. A better weighted one maybe. But its because of the fat under the skin and the slime from the eel. The sharper the knife with it being so fatty and slimy it can actually cause terrible cuts and possible amputations. So definitely doesn't need to be sharper just maybe weighted better.

      All fish has slimy coating over their whole body and eel has like x10 that coating. That is why its so hard to cut. In other parts of asia, they skin this fish from one end while on the other end it has a nail attatched to the chopping board to prevent it from moving. Thats how slimy it is.

    Don't know about things at cebu but where I am from (Bicol), Humba is separate dish from Adobo. It is cooked similar but with a completely different flavor profile.

    Humba is not adobo 🙅🏽 both are pork dishes but adobo si cooked with soy sauce and vinegar while humba is cooked with soy sauce and sugar with some optional fermented black beans.

      First i'm also a Filipino, by the way new guy, watch his episode where he got scammed when he was looking for Soup No.5, here in the Philippines. I'm not a hypocrite like you who denies that there are a lot of thieves here in the Philippines especially in Manila. Might wanna look on our Crime Rate Statistics on that, yes its number one on the list. Also read the whole comment, I said "just kidding". Did not even edit that unlike yours. Where do you live here in the Philippines, try going to Cubao and Quiapo. Stolen cellphones everywhere. LRT and MRT? Make your ears bleed when kids (yes, friggin kids) tear the gold earring from it, don't worry your gold necklace comes with it. If you do live in a rural area then theres rarely much action happening in provinces. Go to the city. Ride the MRT or LRT, see that rich looking guy beside you, yeah you lost your wallet already and he took it and he's gone.

      Sad thing is what SlingshotBlur said is true I witness, yes witness literally many jeep passengers got heir bags ripped from their hands, my ds hidden in my bag was stolen when I found out my bag was opened and it was in front of me... in the jeep... their hands are professionals. Almost got my money in my pocket stolen by a kid with arms bending weirdly good thing I was vigilant and starting that day I never put anything in my pockets, my cousin got robbbed at knife point 3 times in the jeep. I was followed by a group of men so I tried to talk nonsense with the police I saw and good thing he went with it and the men turned around just like that. There are even cases where they rip up the bottom of your bag to get the contents though this rarely happens and when withrawing someone "coincidentally" bumps you after you withraw money and "helps" you pick it up it happened with my uncle and he shouted at the person while grabbing all the fallen money or with my other uncle always have the money with an iron grip and the person fails the attempt not even helping my uncle and walks away seeing that he failed. At markets you must use small change when buying something so that they don't eye you and yes I live in Manila... I mean my DS which I hid in my bag was opened... WHEN IT WAS IN FRONT OF ME!!! I always check my stuff and place the most important ones securely... I even have to convert my tuition fee to small changes because of paranoia but I guess that one is maybe a bit much but hey there is always crimes happening and some places just have more or less than others.
      P.S. The places I am talking about in Manila happen mostly like where he stated like Quiapo, MRT, places with lower security or has many people where they could easily escape or places where the upper and lower status people interact in the community where they take you as their target because you can't deny that people can have a different status of living in this day and age.

      Nah mah, thats called being smart and careful. I always have a 1000 peso bill in my sock so that when I get robbed i'll just give them all my stuff, your life is always more valuable than your stuff.

    I love Philippine fiestas. It's grand and fun. Nowhere else can you such festivity. And daily,there's a fiesta in a town,city or barangay(village) or sitio( sub village) throughout the country.

    Humba and adobo are different dishes for us here in Cebu and most Bisaya speaking regions. Humba is a sweat and savory stew flavored by soy sauce, central (very dark unprocessed coconut sugar), vinegar, bay leaves, garlic, onions and lastly fermented black beans. Adobo to us is pork belly that starts being boiled in water, soy sauce, garlic, bay leaves and black pepper corns then the sauce is allowed to boil off and evaporate making the meat super tender then oil is added to fry and allow the meat to carmelize with the saucy coating.

      Yes here in Luzon Adobo is basically adobo 'chicke, pork or chicken pork adobo (garlic, black pepper, soy sauce, vinegar, laurel leaf) and Humba is same with adobo But with additional ingredients like sugar, dried banana flower, Saba Banana, and some other add Tausi or salted black beans
