    I love Choupique. I learned at a young age the meat has to stay cold, so I always keep a pan of ice on hand to keep them in. Thanks guys, excellent presentation. Aieee!

    Love 'em. I found that you can partially fry the patties then vacuum seal after they cool.Thaw them out when ready and finish frying. Like fresh caught.

      +CastinCajun yeah it was pretty mushy, but I had to go to work, so I just filleted it after, have it now in milk for a little while

    great video guys it's been awhile but I used to live next to a nice rice canal and I caught these
    quite a few times didn't know they were edible. also I like that you keep the video very informative yet nice and short everyone else seems to think that for a video like this it needs to be 15 minutes long, and talk about the world history of the rod and reel the bird they saw on a tree that day everything else it gets old. this is the first video of you guys that I've seen but I gave it a like And subscribe for all those reasons .good job and tight lines!!

    Never heard of the ice water and vinegar. I always avoid keeping them in water to prevent them getting mushy. So I would pat them down with paper towels after cleaned. I'll have to try the vinegar tip. I caught 3 yesterday and will make patties with them today. I leave them over night in the fridge once dried covered in paper towels and they hold up well.

      +Jeff Chiasson , Thanks I will try your way for patties .If you have lots of ice in the water it actually firms the meat up if you leave it in just long enough to get the meat cold . Pat dry , batter and fry right away . When I have fish that I can ice down before cleaning I prefer to not even wet the meat because you are right about soaking them will make them .

    Good informative video. I have seen many videos with many different fish, and in several of them the fish was cleaned while still alive, but this is the first one I've seen where I was told that is actually important to do so. Why is that?

      Dwight Gordon that's a good question! With this particular fish if the fish has been dead several minutes the meat will be very mushy .
      That's why we also put the meat on ice water to firm it up before putting it into the dry batter.

    Great post! Just caught a couple of large ones at Ramah, west of Baton Rouge. Also...I caught a juvenile with green fins and it had eggs.

    That's the key. Keeping them alive. Now I know what to do with them when I catch 'em now. I catch some bigguns down here in Florida. In South Carolina where I grew up, we called 'em mudfish.

    Wish ide new this the other night my friend got one. Took pitures then I made a vidoe and didn't no you couldnt eat. I'm used to grinnel catch and throw back or in the woods hurt trash fish. But the green was so cool I had to make a vidoe and post on my channel. I'm glad someone sent me this on my video last night deff sharing. Question I'm northern la West Monroe. He got his in a green night crawler something new for the area. What's a good way to catch these and what bait or night or day. We got at 1am or 2am somewhere in that time. But I thought grinnel someone sad bowfin due to the spot on the tail you said yea can't spell Cajun words lol. Are they all the same family. Ok that's enough question for now. Lol. Thanks guys.
