How To Fillet ALL The Meat From WALLEYE. (CHEEKS & WINGS?!)

  • In this video we're going to teach you how to harvest every single piece of tasty white meat off the walleye. When you're filleting a walleye most anglers will just take both sides of the walleye the main portions of the meat. In this video we're going to show you how to take the parts of the fish that you're missing out on! The walleye wings and cheeks are delicious!! The cheeks of the walleye are tasty little morsels, a lot like scallops. While a lot of folks take the cheeks, how many of you take the wings? The wings are the pair of bottom fins below and behind the gills. The piece of meat that resides there is maybe a little larger than the cheeks. Leave the fins and skin intact. Rinse them well, batter up, salt pepper, and deep fry. To eat the walleye wings, hold the fins in each hand, fins pointing outward, and downward, so the actual skin of he fish is against your top teeth. Bring your lowers up into contact with the meat, and gently pull on the fins and that little bite slides right off the cartilage. Its pretty damn tasty!

    J Rod nailed it. Great filet job. I use the cordless electric knife and cut right through the rib bones, then follow back to filet out the ribs. Much faster when you have a lot of fish to filet.

    Good for you, fellas. There is no better way to appreciate your fish than to utilize every bit of it. You can also give the outside of the heads a really good scrubbing, then make fish stock. Peppercorns, bay leaves, pinch of mace, and some aromatics. Cut the heads down the center, keep the heat low, and don't simmer too long. Lovely stock for chowders, soups, and stews.

    Another good hack is to have a teaspoon and a tablespoon with you that hast the outer edges sharpened up a bit. A great tool for scooping out cheeks! Great video!

    I tend to scale the belly's on the walleye and leave the meat below the ribs on the collar. Gives you a great piece if you ever throw it on the grill.

    What you are calling the bloodline is actually the kidney of the fish. That is why that bloodline has such a strong fish flavor. If ever you go albacore tuna fishing you will know how critical it is to get the kidney out. But I hold this true for all the fish I keep. Get rid of the kidney on all your fish and the fish will have a much better flavor. This is also why when you clean a salmon or trout you want to get down on that backbone and remove all that bloody mess. that is the kidney. My dad owned a fish cannery on the Oregon coast and I have cleaned tons of tuna and salmon. If you do not get the kidney out the fish will pick up that strong flavor that J Rod mentioned. I also skippered some of dad's commercial salmon and tuna boats. If I did not get the kidney out of the fish before the fish went into the hold on ice dad would not buy the fish; even though it was his own boat that caught the fish and he would not make as much money on the sale of the fish to another cannery. That used to upset me as I was paid on a percentage of the catch. So if dad's cannery paid me 2 cents on the pound more for the fish and I was selling a ton of salmon that was money out of my pocket. Fortunately the tuna was processed at the cannery. All I had to do was bleed it and get it on ice very quickly and he would buy it.

    #nowaste...l try to use as much of my salmon and steelhead as possible. I'll cut out the collar meat, the belly meat, and get whatever is left off the backbone. I add it to chowder, scrambled eggs, pasta, you name it. You're respecting the fish by not wasting it. I've never had walleye. Want to go try it.

    That mat might be the answer to filleting snakehead. They are as slippery as an eel But no bloodline

    I highly recommend getting an electric filet knife. As a charter captain on lake Erie who as cleaned thousands of walleye. It's definitely the way to go.

    I have always wanted to compare lingcod and walleye. How about an Addicted taste test challenge? I think they should be about the same size to make it fair. Lingcod is my favorite fish to fry but I no longer have the boat for that kind of fishing. I do have a small sled though and walleye is an option.

      If you see my post above you will know that I grew up on the ocean. My wife's favorite fish was lingcod until she tasted a walleye. Now I believe she favors walleye over the ling. Greenlings were also a big hit for her. But she did not like the color of the flesh until it was cooked so she would only eat it if she did not see it before it came out of the pan.

    Do those mats work. Good for panfish? I've filleted over a hundred bluegill in the last week. Newspaper works but. It sucks

      The mats work amazing for panfish! Just a little downward pressure and they stick like glue.

      Check your local waters' laws . Quick Google search says no size or limit on rivers. 12" min on ponds, reservoirs and lakes, no more than 1 22" fish per 8 fish limit. (In WA)

    Ever save the back bones? Whack the head off, bread, and fry whole if too big for pan cut in half. That way you get meat between the bones.

      Addicted Fishing I live on POW and I had a pretty good winter and spring season of steelheading. The break corona gave me from school let me focus on swinging flies for steelhead and nymphing for them. Counting down the days til next steelhead season!

    From what I understand you guy are manly base around the north west (Washington and Oregon) I live in Vancouver WA (above Portland) have you guys fished there and if so had you had any issues with anti fishing people (videos of them keep popping up for me on RUclips) I had not had the chance to fish for at least 6 years and once this stay at home is over I am getting my license and I’ll fish ASAP. Just knowing the kinds of people around the city I live I sometimes wonder how many of them are peta followers are anything similar.
    I would of asked on Twitter but I deleted my account (can’t handle the people on there) so this was my only option.

    No I don't take anything else. I don't cut the mud out though. But I did learn something today, I have never been taught how to or what to do with any fish I have learned myself before RUclips and this information, that the mud is what makes it fishy. I never figured that out.
