At some point a thin tire must become harder, less sticky then a fatter one, as the shear strength of rubber at contact patch becomes limiting factor. But apparently that hasn't limited these skinny tires. Another benefit of fatter tire is they average a bigger patch of surface, such that a pinch of sand or few drops of oil would be better tolerated where as the extreme case of a road racing bicycle with high pressure, tiny contact patch could cause a crash, the motorcycle tire is much more forgiving. But a track can be far more uniform and controlled than a common road. Likewise drag racing cars have extremely large contact patches, not just wide but low pressure and wrinkle walls, with super sticky but low shear strength rubber. If you were to use such rubber on a bicycle tire size contact patch, given same weight, both large contact patch and small have same grip up to the point the rubber shears on the skinny tire as small contact patch has proportionally higher contact pressure and grip per unit area. (if that makes sense--getting into the weeds, lol)
