Kaddu ki sabzi 2 ways
Ingredients

Kaddu (red pumpkin) 500 gms
Mustard oil 2 tbsp
Methi seeds soaked 1 tsp
Garlic chopped 2 tbsp
Dry red chillies 2 pcs
Turmeric powder ½ tbsp
Salt ½ tbsp
Black salt ½ tbsp
Mango pickle 1 tbsp
Sugar ½ tbsp
Chefs Special recipe
Kaddu (red pumpkin) 500 gms
Mustard oil ¼ cup
Methi seeds 1 tsp
Saunf ½ tbsp
Mustard seeds 1 tsp
Kalonji 1 tsp
Jeera ½ tbsp
Dry red chilli 1 pc
Hing 1 tsp
Bayleaf 1 pc
Salt ½ tbsp 1 tbsp
Turmeric powder ½ tbsp
Ginger & green chilli paste 1 tbsp
Raw mango slices 6-7 pcs
Methi seeds soaked 1 tbsp
Jaggery 1 tbsp
Red chilli powder ½ tbsp
Amchur powder ½ tbsp
Garam masala ½ tbsp
Water as required
Coriander chopped 1 tbsp
Method
Wash and clean the kaddu. Remove seeds, peel off the skin and cut it into cubes.
Heat a pan, add mustard oil, methi seeds and cook it.
Then add chopped garlic, dry red chilli and saute.
Then add turmeric powder and saute.
Later add kaddu cubes and stir it. Cover it with a lid and cook it for 3-4 mins.
Add coriander powder, red chilli powder, amchur powder, mango pickle, sugar, salt and saute them.
Cover it with a lid, cook it on low heat until the kaddu is tenderised.
Home style kaddu ki sabzi is ready to serve.
Wash and clean the kaddu. Remove seeds and cut kaddu into cubes.
Heat a pan, add mustard oil, methi seeds, saunf, kalongi, mustard seeds, jeera, dry red chilli, hing, bayleaf and let it crackle.
Then add kaddu cubes and saute them on medium high heat.
Then add salt, turmeric powder and saute.
Later add ginger & green chilli paste, raw mango slices, soaked methi seeds and saute.
Add salt, red chilli powder, coriander powder, garam masala, sabzi masala, amchur powder, jaggery and cook it.
Add some water and cook it on medium-low flame until it gets thick.
Lastly add chopped coriander and mix it.
Bhandara style kuddu ki sabzi is ready to serve.

What a coincidence, Ajay ji. Today afternoon, even we had lal kaddu ki sookhi sabzi with kala chana in it, for lunch. Having grown up with the flavors of Paanch phoron since childhood, it is my universally fave spice blend...hands down! Being a bengali, it is a must have on our kitchen shelf. Be it a sabzi, dal, sweet chutneys or even fish preparations, its omnipresent and imparts such a beautiful flavour.

In South India we use this Red kaddu in sambar, kadi .. it's used in in many dishes even in kerala cuisine. Good for weight loss and a tasty veggie. I use it as base for soups without use of corn flour

Pumpkin fry, Bengali style, marinate the pumpkin pieces with salt and turmeric for half an hour then fry it and eat it with Dal and Chawal.

Don't throw away pumpkin skin. Roast some chana dal, kashmiri red chillies and grind with steamed pumpkin skin, salt, tamarind and fresh coconut. Finally, add tadka with mustard seeds, jeera and hing.

In paanch phoron u r supposed to take all 5 spices in equal quantity. The 5 spices are fennel seeds(mouri), fenugreek seeds (methi), nigella seeds(kaalo jeere), yellow mustard seeds(shorshe) and an authentic bengali spice called radhuni. Jeera can be used as a substitute for radhuni but it won't add that authentic taste or smell to the dish.
But this isn’t a Bengali recipe . This is a UP recipe so the panch phorna also changes
@@ChefAjayChopra On point Ajay ji. Radhuni is not mandatory but an addition to the blend that later came into Vogue. However flavourful it might be, it always alters the after taste of the finished product/dish, considering how strong it can get. The traditional Paanch Phoron comprises of what u have used here. Even Nigella Lawson in one of her TV shows, used this traditional blend (minus radhuni), to spice up her "Paanch Phoron Alooooo", which was nothing but one of her ways of calling a spiced up potato hash topped with a sunny side up egg but only Indianised.
