The Guanciale is one of the best pizzas I've had. I've been there several times and sometimes the crust is over-charred imo, and they definitely can put more guanciale, but always delicious. L'industrie, Lucali and Una pizza are next on my list!
It's all in the water which in turn makes a great dough. that's why the pizza out west is horrible when compared to pizza in NY NJ Connecticut and MASS oh yeah I can't forget PHILLY.
