Italian Creamed Cipollini Onions Side Dish Recipe
1 to 1 1/2 pds cipollini onions - purchased mine at Wegmans
1 cup frozen peas
1/2 cup vegetable stock
1 cup heavy cream
1/2 stick unsalted butter
salt and black pepper
pinch of garlic powder
1/2 cup chopped fresh parsley
Preheat oven to 375 degrees
In an oven safe pan on low medium heat add butter and melt slightly.
I am using my cast iron pan.
Add peeled Cipollini onions, sea salt and fresh ground black pepper.
Cook for approx 2-3 min on each side.
Bake at 375 degrees for 10 minutes.
Remove from the oven and add about 1/2 cup vegetable
stock.. You can use chicken, beef, seafood or water.
Giving that a stir, bring up to heat and let simmer for a minute
or two.
Next, add heavy cream, black pepper and pinch of garlic powder.
Cook and reduce for 5 minutes. You can see it thicken.
Add peas and fresh parsley. Stir well and cook for 3-5 minutes
until peas heat through.
Serve with fresh parsley on top. You can also
grate some parmesan on top.
Enjoy

I always wanted to learn how to make creamed onions. Last summer I got a great big sack of pearls and the farmer's market that I pickled some, roasted some in a pot with roast beef or pork and also shiskabobed some. They were a pain to peel until I decided to search out how to peel a lot at once.
