    INGREDIENTS & NOTES:
    #1 Go To Crispy Tofu 0:34
    200g (7oz) firm tofu
    1 tbsp cornstarch, flour or potato starch
    a generous pinch of salt
    spices of choice, to taste
    1 tbsp veg oil for the pan
    #2 Tofu Curry 1:16
    the crispy Tofu from recipe #1
    a splash of white wine or rosé*
    2 tsp soy sauce
    1 tsp agave syrup
    1 tsp red curry paste
    ¼ tsp chili flakes, optional
    ⅓ cup (80ml) light coconut milk
    1 green onion, chopped
    1 tbsp lime juice, more to taste
    a splash of water, to adjust the consistency
    *the wine can be omitted - OR substituted with a splash of grape/apple juice + 1 tbsp white wine vinegar
    2 servings of cooked rice
    more green onion for the top
    → serves 2
    #3 Frozen Tofu Technique 2:11
    350g (12 oz) extra firm silken tofu*
    1 tbsp oil for the pan
    for the marinade:
    2 cloves garlic, minced
    2-3 tsp sriracha
    1 tbsp soy sauce
    2 tbsp white wine, red wine, vodka or water
    2 tsp sugar or agave
    1-2 tsp tahini
    1 tsp cornstarch
    *defrost the tofu, either by letting it sit on the counter for a few hours, OR by letting it sit in a pot / bowl filled with hot water for about 5 min
    **use a non stick pan (for all these recipes)
    → serve in bowls, wraps, salads or as a snack with a dipping sauce
    #4 Minced Tofu Wrap 3:57
    200g (7oz) regular firm tofu
    1 tbsp oil for the pan
    for the marinade:
    1 tsp gochujang (or up to 2 tsp if u want more spice)
    1 tbsp soy sauce
    1 tbsp white wine, red wine, vodka or water
    2 tsp sugar or agave
    1 tsp sesame oil
    1 tsp vinegar (rice, white wine, balsamic)
    1-2 green onions, minced
    for the wrap:
    2 medium to large tortillas
    hummus or other spread of choice
    avocado
    greens of choice
    optional: pickled onions*
    → 2 wraps
    for the pickled onions:
    2 red onions, chopped
    1/2 tsp salt
    1 tbsp agave
    1/3 cup (80ml) white wine vinegar
    1 tbsp apple cider vinegar
    1/3 cup (80ml) water
    → LEAVE IN FRIDGE FOR AT LEAST 3 HOURS (best overnight)
    #5 Peanut Butter Tofu Dessert 6:07
    190g (¾ cup + 1 tbsp) creamy peanut butter*
    50g (⅓ cup + 2 tsp) powdered sugar
    pinch of salt
    400g (14oz) silken tofu**
    a dash of cinnamon
    a pinch of salt
    1 tsp vanilla or a few drops vanilla aroma
    for serving: berries, vegan cookies etc
    → serves 3-4
    *I have only ever made this using the more firm, processed kind of peanut butter (the one i use in the video contains soy oil), feel free to try it with natural peanut butter, but the mousse might turn out a bit more runny in texture then!
    **can be extra firm silken tofu or regular silken tofu
    #6 Shredded Tofu Dumplings 7:25
    1 onion
    1 small piece of ginger (about 1 inch, 2,5cm)
    2 cloves garlic
    1 tbsp oil for the pan
    200g (7oz) regular firm tofu
    1 tbsp soy sauce
    1-2 tsp sriracha
    1 splash white wine, vodka or water
    1-2 tsp rice vinegar
    1 tsp agave or sugar
    salt and pepper to taste
    2 handfuls fresh baby spinach
    1 handful cilantro or parsley, finely chopped
    about 20 dumpling wrappers
    1-2 tbsp oil for the pan
    1-2 splashes of water for the pan
    for serving: soy sauce, roasted sesame seeds, chili mayo…
    → serves 2-3
    #7 Crispy Baked Tofu w Creamy Pasta 9:41
    200g (7oz) regular firm tofu
    about ¼ cup (~60ml) soy sauce
    2 tbsp cornstarch
    3 tbsp panko bread crumbs
    ¼ tsp salt
    black pepper, chili flakes to taste
    a drizzle of veg oil
    for the pasta:
    2 cloves garlic
    3 sundried tomatoes, minced
    1 tbsp oil (from the tomatoes if possible)
    ¼ cup (60ml) white wine or vegetable broth
    1 ¼ cup (125g) penne pasta
    ½ cup (125ml) vegan soy cream
    50 - 100g vegan feta (1.8oz - 3.5oz)
    1-2 handfuls fresh basil
    1 tbsp lemon juice, or to taste
    salt, to taste
    up to ⅓ cup (80m) water to adjust consistency
    → serves 1-2

    ½ tsp matcha powder
    1 tsp unsweetened cocoa powder

    ½ cup (125ml) non dairy milk, more if needed

    Definitely do not defrost the tofu in boiling water! The whole point of freezing it is to give it a meatier, and therefore less watery, texture, so boiling it makes it lose all the benefits. Just let it thaw at room temperature and it will turn out amazing 😍 I love tearing it into chunks and coating it in starch like you did in the first recipe, and then cooking it in the oven before coating it in the sauce, so it gains an even betted texture 😋

      I do this too. Not everyone in my household are vegan, but even the meat eaters love tofu like this. Their favourite being a bbq tofu steak. I usually rip the pieces up for that nights dinner but have to make the steaks from another pk of tofu slicing as thinly as possible to use as a left side over for them for lunch. I use dry bbq seasonings and corn starch as a dry rub and let it sit for a bit, I bake the tofu, chunks and steaks, and when just about done, I add a little coating of homemade bbq sauce to which I add some wasabi for a little spice. Store bought bbq sauce would work well too. I let it bake under the grill/broiler a little longer until the bbq sauce goes sticky and chars a little. The next day they all have a bbq tofu steak with salad veg in a pita for lunch. If I forget to make the steaks, there is outrage! 😂 it is one of a few vegan meals my family will happily eat. I agree with not defrosting the tofu in water!! When I freeze it, I will either take it out the night before to defrost it in the fridge or take it out of f the freezer an hour or r two before I am going to use it and have never had an issue with my t not being thawed. Sometimes I cut or tear it before freezing so it is ready to go as soon as it is thawed and it thaws a little quicker.
      I make a mock Mongolian “beef” using the extra firm tofu that has been thawed and then grated. I coat the pieces in a gold amount of corn starch and fry in sunflower oil along with some grated ginger and minced garlic until it has gone crispy. Then add the brown sugar (I use date sugar) and soy sauce, some chilli or chilli flakes and the juice of an orange and allow it to simmer until it thickens. I sprinkle with finely sliced spring/green onion and toasted sesame seeds. I serve with rice and either steamed broccoli or green beans. It is such an easy meal, so quick, and so flavourful.

      I agree. I usually take it out of the freezer before I go to bed, and it's perfect in the morning.

    I recommend freezing the extra firm tofu block and then defrosting in the fridge or counter. Then you can just squeeze out all the water by hand. You'll be amazed by all the water that comes out.

      I once followed a “vegan tofu nugget” recipe, and they repeated the freeze - (room temperature) defrost cycle a few times to get to an even more “meaty like” texture!! ♡ For an even more convincing texture you could press the tofu during the defrosting process ✨

      I've found I can just microwave it frozen to defrost it, then squish out some extra water (with my hands). I use like the firmest block I can find and just freeze it in the package. :)

    A little Tofu recipe for you guys:
    You need
    One block of tofu
    3 Tablespoons of Salt
    Herbs of your choice
    Water
    A Jar
    Cut the Tofu into little cubes. Take your jar, put in the water, salt, herbs and tofu. Then close the jar and put it into the fridge for 2 days.
    After that you have homemade vegan tofu-feta which is really good for salad or wraps:)

    okay so this is my go-to wrap recipe!
    cut a block of tofu into chunks and mix it with the following marinade:
    - 4 tablespoons soysauce
    - 2 tablespoons agave syrup
    - 2 tablespoons maple syrup
    - some garlic, salt, ginger, pepper
    you can then after like 20 minutes fry all of that in a pan, sometimes i also fry some onion with that.
    then for the whole wrap:
    -vegan cream cheese
    -the fried tofu
    -avocado
    -cucumber
    it´s not much in there, but trust me it´s soo good!

    Yep, the idea with freezing your tofu is to draw extra moisture out of it when you defrost. After defrosting, pressing out the tofu is good to get that moisture out. Changes the texture plus also allows the tofu to 'reabsorb' a marinade or seasoning. 👌

    The wrap or sandwich that I could probably eat every day (and I have eaten it once a day for over 5 months) is a spicy peanut lentil rainbow wrap.
    Mix cooked/drained lentils with peanut butter or peanut powder, maple syrup, liquid aminos or soy sauce, apple cider vinegar, and hot sauce of choice (my fav is siracha). Measurements are to taste. Spread lentil peanut mix on wrap with a variety of colorful veggies like tomatoes, shredded carrot, yellow bell pepper, leafy greens and red “purple” onion, colors of the rainbow 🌈

    I tried the peanut butter mousse but with almond butter. Life giving is an understatement. It was EXTRAORDINARY. I had no idea you could make something that smooth, creamy, and delicious using tofu! Thank you so much for the recipe :DD
    By the way, it could definitely work as cake/cupcake frosting. I'm gonna try that.

    Hey, I really love your videos! It's great to see creators still make classic RUclips Videos instead of hopping on the 30 second short train. I got your cook book as a gift, and the pumpkin brownies were a great hit!
    For recipe recommendations:
    Tofu Tempura is amazing in sushi! Start by cutting tofu into sticks and marinate in a mix of soy sauce, miso, mirin, sake, nori chunks and garlic powder for a few hours. Prepare three plates: One with plain flour, one with a flour water thick slurry, and one with panko, coat with flour, wet, panko, and fry until crispy.
    One of my favorites is Xi Hong Shi Chao Ji Dan, Tofu "Egg" and Tomato stir fry, a chinese dish.
    Tear the tofu in little chunks and toss in a little cornstarch. Fry it until slightly crispy and season with a little turmeric for color. Set aside and fry some garlic until fragrant with tomatoes cut into pieces, until mushy. Add the tofu back in and stir fry until mushy. Add a tbsp of ketchup, soy sauce and mayo, and a cornstarch water slurry to thicken. Add some melty cheese if you want, it fits lovely with the texture. Season with black salt, white pepper.
    Another dish is Hong Shao Rou - Tofu "Pork Belly" braised in a sweet, salty, red sauce.
    I love a version with carrots, potatoes and shiitake mushrooms. The sauce contains dark soy sauce, star anise and five spice, you'll find lots of recipes for the original dish. I hope you like the recommendations, they're my childhood dishes!

      i would love to make the hang shao rou that sounds divine! how would i make it with the tofu? i know you have to braise it but wouldn’t the tofu break apart if you braise it in the sauce for super long? i could be wrong i haven’t made tofu like that before so i was just wondering! any tips would be great!

    *wrap recipe recommendation*
    first off, make some vegan scrambled eggs by mixing 2 heaped table spoons of chickpea flour with 2 generous pinches of kala namak, some pepper, turmeric and paprika, then add water until it reaches a pancake batter like consistency. set aside and dice some smoked tofu, then fry with some oil until slightly crispy. add the batter into the pan and fry on both sides until firm and golden brown (do not stir, instead break it apart into chunks with a spatula).
    take a wrap, spread some hummus or vegan mayo onto it, add the vegan scrambled eggs, as well as some chopped carrots, red cabbage and pickles (you could also add some more smoked tofu for extra protein), then top off with some sriracha and fold it up. it is sooooo good and i have been obsessed recently, i swear

    My wrap idea is more like a snack roll recipe but I'll still write it:
    -a few tiny tortillas
    -as much pb as you desire
    -jelly but not too much to overpower the pb
    spread onto tortillas, roll them up, and eat them! I like to toast mine because warm pb is sooo good. This would also be delicious if you replaced the jelly with a banana and added cinnamon

    Firm tofu marinated in liquid smoke and maple syrup and grilled is epic.
    Also , silken tofu mousse with tahini or black sesame powder flavouring. White chocolate and maple cinnamon is another good combination.

    💡WRAP IDEA : homemade seitan, flafoured in a saucepan with spice mix that is used for lamb and olive oil. Put in a normal wrap the flavoured seitan, baked sweet potato, greens, vegan yoghurt with lemon and salt and avocado! After wrapping it, grill the wrap in the pan It’s amazing💚🌱💕

    My go to wrap is fried chickpeas with a hot/salsa sauce and spices. For the filling we go with the chickpeas then chopped red onion, mashed avocado, tomatoes and roman lettuce. Super fresh and crispy. Highly recommend. Second go to fav wrap is YOUR red beans spinach and white cheese wrap. Big fan ❤

    I love wraps! my absolute favourite is a black bean wrap.
    I caramelize some onions first, and fry up some mushrooms with those, and when they're nice and browned i add some black beans. Cook that up until the liquid evaporates, add some seasoning (huge amounts of cumin, some salt, pepper and smoked paprika) and then serve in a wrap with homemade yogurt garlic sauce (yogurt and mayo in a 4:1 ratio, as much garlic as your heart desires, lemon juice, salt, pepper and dried oregano), some shredded cheddar, green onions, corn, tomatoes, cucumbers and arugula. I am not vegan, but i think it could be veganised with some plant based cheddar and vegan garlic sauce!

    You and the comments are making me want to try freezing tofu again - I tried it once and just found it spongey. But maybe I'll give it another shot lol. The dumplings look good, I've had dumpling wrappers in my freezer for a while so will try that

    I fell in love with using silken tofu after seeing the hiyayakko recipe in one of your last videos. Silken also works so well in smoothies and such so I have to try out the peanut butter dessert recipe 😀 Looks delicious.

    I have two Wrap recipes!:)
    First one is some mashed up avocados/Guacamole mor the base, some of tsatsiki, and then some classic egg-like tofu scramble with fried tomatoes on top. It's a great breakfast Wrap:)
    Second one is with vegan cream cheese as the base, some fried like-chicken or fried seasoned tofu bites, some chopped up tomatoes and cucumber on top + some peanuts, and then some spicy mayo sauce to top it all off. This one is great for lunch or dinner

    Anyway- my fave wrap recipe (its a sweet one):
    2-3Tbsp of Soy Quark (I am using the one by the brand sojade)
    1 Apple
    1-2 tsp. Cinnamon
    Vanilla powder/extract
    1 Tbsp. Brown Almond butter
    2 Tsp. Agave syrup
    1-2 Tsp. vegan butter
    a Tortilla-wrap (obv.)
    1. Caramelise the apples with cinnamon in the vegan butter.
    2. Add Agave sirup and vanilla to the soy quark.
    3. Spread the quark evenly on the wrap, add those crispy Apples, put some almond butter on top and wrap it up.
    4. If you got the time you can add a little bit more vegan butter to the pan and fry the wrap on both sides until golden brown.

    I just tried the peanut butter mousse with silky tofu. I replace sugar with mapple sirup and it's delicious. Now I have to refrigerate it and be patient, because it's very addictive. Thank you for this recipes. I'm not very talented for vegan dessert, I'm more into savory recipes, but now I have a great option.

    For the wrap idea - I expanded on one of your older wraps by adding bbq tofu. On a pan, fry the tofu until golden, lower the heat, pour bbq sauce over it, wait until it evaporates a little and then throw in nutritional yeast and coat everything in it. It will create kind of crust on the tofu, and it tastes amazing! Can be done with smoked tofu and soy sauce as well.
    Then the wrap: dr oetker vega cream, bbq tofu, chickpeas fried with salt and nooch, spinach, cherry tomatoes, basil marinara sauce and sriracha mayo. I usually show this to people who never tried vegan food, and it's usually a huge success.

    I make tofu breakfast burrito type things for lunches! Tofu scramble (but in bigger pieces, not crumbled up), black beans, veggies. Then wrap it up in a tortilla wrap with spinach, cheese, hot sauce etc. So good!

    I've recently discovered Tofu-Katsu.
    It's Tofu with a thick batter then coverd in Panko-breadcrumbs and fried in lots of oil.
    Served with rice and some well seasoned and glazed vegetables makes it heavenly! And it's made fairly quick, too.
    Given it is not the healthiest opition of Tofu but soooooo good and reminds me of the crispy meats that you can get at "asian" restaurants :)
    So good!
    Oh and glazed tofu was a great alternative for the meats served at christmas dinner last year :)

    Ich hab in letzter Zeit wraps immer zur Reste Verwertung benutzt. Hab dann einmal auf die eine Hälfte vegane Frischkäse Creme benutz dann Räuchertofu drauf getan und eine Sauce ( z.B. housin oder sriracha Mayo ) und das dann mit veganem Käse bestreut, es gefaltet und dann ins Waffeleisen getan. Einfach so lecker ind einfach.

    Crunch wrap idea, it's a little flavorful and heavy.
    1) spread base of hummus, chipotle sauce and (if you wish) mayo.
    2) add seasoned roasted veggies - bellpeppers, onions, garlic, any other veggies.
    3) add protein of choice - tofu or cottage cheese like cooked here.
    4) a slice of cheese or grated mozzarella or feta
    4) green of choice if you wish
    5) wrap and grill.
    Eat with hot sauce or add somewhere in the mix.
    P.S. please show how you wrap your wrap because mine often tears apart even if I heat it.

    I do have a recipe some Cypriot vegans might like for breakfast. Cut some Tofu into half inch/1cm cubes and fry them in some olive oil, put them to one side. Get your chickpea flour mixture for scrambled egg type doodah with some fresh chopped parsley and spring onion in there and fry that a bit. Once that's warmed up add the fried Tofu and mix well andd put some pink/black salt on it. The Tofu replaces Haloumi cheese, and that really hasn't got much flavour anyway and firm Tofu has a very similar rubbery texture like Haloumi.

    i always do my wraps with: guacamole (simple: just avocado, lime/lemon and season to taste); refried beans - pinto beans cooking in oil and fresh garlic (a lot), salt, pepper and cumin, cillantro in the end and blend it; caramelised onions and (red) peppers - i simply let it cook in a pan covered with a bit of oil and salt for ~30 min. and then assemble everything :)

    My go-to wrap recipe is always hummus, lettuce, cabbage, smoked or homemade baked tofu/kidney beans/black beans/chickpeas (one of those as my protein), a sprinkle of nutritional yeast, a generous drizzle of soy sauce (because I am obsessed with soy sauce and have been my entire life), and sometimes a little bit of olive oil! On occasion I swap out the hummus for vegan cream cheese if I have it on hand and am feeling that vibe :)

    My favourite wrap filling is made by combining a can of brown lentils with about half a tub of hummus, as much sriracha as you'd like, some finely chopped bell pepper and pickled red onions and salt/pepper to taste. It's enough for about two wraps, I also add some salad to it :)

    My go to wrap is the quinoa southwest wrap with guacamole (i think i picked that recipe up years ago from somewhere) :D
    Cook up a prefered amount of white quinoa with a bit less water than it says on the packaging. When it is cooked add a whole bunch of vegan salsa (mine is naturally vegan, I mostly use the Maggi one) and let the quinoa soften up with the added salsa. It shouldn't be completely smothered in it but a good amount is necessary for the evaporating liquid and the taste it leaves with the quinoa. When it's ready add a can of sweet corn and beans of choice (I LOVE the black beans by Demeter but good ol' kidney beans also taste great) and give it a good stir. Serve hot or cold with either freshly sliced avocado in a wrap (or on its own) or of course with homemade guac of preference.
    This is honestly so good and hearty and filling and ofc you can customize it any way you like. The best is you can just take your favorite salsa sauce and with the avocado it's super refreshing and not too heavy on the stomach. I always take one or two wraps with me when we have a picknick or when we go to the Freibad :3

    my go-to tofu recipe is
    freeze extra firm tofu,
    defrost it by just letting it sit in the fridge,
    squeeze the water out and cut into cubes,
    mix flour and water and seasonings and coat the tofu in it, (i just eyeball everything lol you want it slightly runny but not too runny)
    then roll the tofu in some panko breadcrumbs (seasoned with salt and pepper),
    air fry for about 15 minutes at 380F, spraying it with oil and giving it a shake every so often,
    melt some butter and some buffalo sauce together, coat the tofu,
    and then air fry the tofu again for a few more minutes

    Wrap Idea: I love the combination of Falafel (especially the mix from dm!), Creme Vega or Yogurt, fresh vegetables (living for baby spinach inside of wraps!) and some sweet chili or sweet and sour sauce!

    I find the best way to freeze tofu is to buy firm/medium firm tofu that comes packaged in water and freeze it as is, then thaw in the fridge. My understanding is that the ice crystals formed in the freezing process are what alters the tofu's texture, hence why freezing pressed, dry tofu doesn't yield the same results. Thawing in the fridge makes it easier to squeeze out the extra water without extra steps and without burning your hands 😉

    Den Kohl schneidet man klein, dünstet ihn in Veganer Butter mit Salz und Pfeffer, dann Sojasauce (und evtl. Sriracha) dazu. Und dann den Wrap eben mit Käse bestreuen, den Kohl dazu geben und alles nochmal toasten✨

    Wrap idea - I know it sounds weird at first but vegan meatball wrap, trust me! Cook meatballs in the marinara sauce like you would, I use mock meat but you can do your own lentil or tofu ones, and roast some mushrooms onion and red peppers in the pan. Layer of fresh salad, roasted veg, a few meatballs in the sauce and some vegan cheese optionally. Perfection 🌯💛

    I fill my wraps with tofu scramble (including fried tomatoes, zucchini, and mushrooms), hummus (or mashed avocado) and spinach and then drizzle over some balsamic vinegar (high quality, bc its sweeter) or balsamic glaze. This is my go to Breakfast burrito.

    I buy extra tofu then put a few in the freezer, and take it out the night before and leave it in the fridge to defrost.
    It'll turn out much better then trying to dethaw it quickly 😅💚

    My go-to sweet breakfast wrap is this one (I do not measure anything...):
    - 1 whole-wheat wrap
    - soy yoghurt
    - chocolate protein powder (or normal cacoa powder)
    - 1 ripe/sweet banane
    - peanut butter
    Mix the yoghurt with the chocolate protein powder and spread it on the wrap. Then put the banana pieces on top and drizzle with (a lot) peanut butter :) Fold it, toast it and enjoy!

    Wrap idea: pan fry shredded tofu with mexican seasoning, add mexican beans and corn (I buy it in a can), add a little bit of couscous and let it cook. The cooked mixture goes into a wrap along with lettuce and vegan cheese. Then it’s best to grill the wrap so the cheese melts.

    *Just to add it: if you have tofu in foil like container you can steal freeze it in that package but then cut it out, take the tofu out to microwave safe dish & you can defrost it in the microwave this way.*
    I’ve done it both way. *Never ever put foil to microwave because it will starts on fire inside the microwave & blowed it out.*
