Thanks @Maurizo you gave much in this exchange.
Jay, your channel feels like seeing an indie band in a hole in the wall venue... before they become a stadium act a couple years later.

There was a shortage of yeast right when everyone started “homesteading” as a response to the pandemic.

Great to hear your story Maurizio. Your book is so beautiful and I worry I will drop some ingredient on it....I guess it will happen one day but I want to keep it in the perfect condition that it is. So far loving reading and made some of the recipes, which have turned out great.

The cookbook is amazing. I wish I had bought it first, when I started baking sourdough.

Dude, please, do your homework. I love Maurizio, follow his website, have made donations, bought his book. But Chad Robertson is the man behind the sourdough bread craze. It started with his Tartine Bread book, released in 2010 and has revolutionized home bread baking as well as countless artisan bread bakeries around the world.

you are 100% right. He brought sourdough to the US. But if you read tartine bread and you read Maurizio book....its a league apart. Tartine bread recipes especially in the end are left for interpretation
