How to make a CREAM WASHED cocktail | INVERTED White Russian recipe

- In this episode I show you how to make a cream washed cocktail - an Inverted White Russian. But first I make a classic White Russian cocktail, know as the favorite bevarage of The Dude from The Big Lebowski - he drank nine of them throughout the film. Because I am not big of a fan of this cocktail I made it to my taste, using some of the mixology skills I learned behind the bar. For this cocktail, which I named the Inverted White Russian, I used milk washing, but using cream to stay in line with the classic White Russian. It creates a wondefully rich, creamy mouthfeel! The Kahlúa-coffee foam works so good on top that I'm sure you'll love this cocktail just as much as the whole 'Cocktail Time' crew did!

Cream-washed vodka:
• 120 ml (4 oz) vodka
• 10 ml (1/3 oz) simple syrup
• 6 drops coffee bitters
• 2 barspoons lemon juice
• 45 ml (1.5 oz) cream
Mix everything, except the cream, in a mixing glass and then pour it into the cream (never the other way around). Put everything in the fridge overnight, then strain it trough a muslin or cheesecloth, changing the bowls midway, like I did in the video. You will end up with a clear, creamy vodka, that you'll want to sip on its own, but try to resist.
Kahlúa-coffee foam:
• 1/2 gelatin sheet
• 60 ml (2 oz) hot water
• 150 ml (5 oz) Kahlúa Coffee Liqueur
• 120 ml (4 oz) Coffee
Put the half of a gelatin sheet into cold water to soften it a bit. Squeeze out the water and place it in 60ml of hot water. Strain until it dissolves. Put the gelatin mixture in the fridge to solidify into the gel. Add coffee, Kahlúa and all of the ge into a blender and blend it to until it's very well incorporated. Add the mixture into the isi siphon and charge it with a N2O cartrige. Shake and place the charged siphon in the fridge to cool. And it's ready to up the Inverted White Russian.
Inverted White Russian:
• 60 ml (2 oz) cream-washed vodka
• Top up Kahlua coffee foam

Hi Kevin, this definitely is a great twist on the White Russian! I tried making the cream washed vodka, scaling up to about 500 ml of vodka, 45 ml of simple sirup, 200 ml of cream and 45 ml of lemon juice, as I inferred from another one of your videos that 1 barspoon would be around 5 ml.
The mixture didn't really curdle, though - I kept it in the fridge for about 6-8 hours before taking it out.
Do you think I should have kept it in the fridge for a little bit longer or should I have added more lemon juice?
At least I managed to end up with clear and creamy vodka after multiple filtrations, using coffee filters at the end, but if I could get the mix to curdle, things would be easier.
But I gotta say: I had a lot of fun with the experiment, and the resulting cocktail was very enjoyable too!

Wow! I’m obsessed with this recipe!! It’s quite clever, true to the cocktail, and not as complicated as it appears. Milk washing the vodka is an excellent way to keep the spirit of the drink alive while elevating it. The foam is way simpler to make than I expected (yes I did buy a whipped cream dispenser for this), it packs a punch, and adds back in some of the viscosity removed from the elimination of the cream, in a more refined way.

You got a way clearer result with the vodka than I ever have doing clarified milk punches. I guess I'll have to try leaving it to sit overnight the next time I make one.
Have you waited long enough while the punch was filtering? First couple of second you will get a foggy results, but later when the curdless started to act like a second filter, you will get clearer drink. I hope that you'll succed next time.

Would love to have more details on using agar agar for clarifying. I believe it needs to be heated to work, so it's not a simple substitution. I love that you offer vegan options, but do hope that you will go into more detail when doing so. Awesome videos and cocktails!!

Great production, easy to follow, cocktail seems balanced and delicious. Haven't done a non-dairy foam before, I'd be interested in trying that out. Is that 120mL of coffee you listed espresso? Trying to figure out what the proper dilution is.
Thanks! 120mL is a bit longer espresso with added water. It depends on the coffee you use. After 40mL of espresso, the coffee started to taste sour, so you want to remove that part. It is best to pour the espresso (30-40mL) or more espresso shots if you want more coffee flavoured foam and then add tap water until you reach 120mL.

But darn, that's awfully impractical 🤯😅 so, although this new version may yet taste absolutely brilliant, it still defeats the purpose of an easy to make, simple & classic cocktail imho 🤷🏻♂️ that being said and as I first pointed out, I applaud the approach and it makes sense to me trying such new ways to build a common classic differently, simply to show off what can technically be done and how little limits there can be to basically any drink out there...

The idea of using cream-washing is brilliant but just wondering what kind of cream were you using because I know there’s different between milk-washing and fat washing. However cream could be a mix of these two techniques. I would be happy if you could answer that. Cheers!
It's whipping cream. You are right that cream has a lot of fats, but this is still a milk washing technique since we left some fats in the drink. Fat washing would take out all the fats with the freezing technique, but this wouldn't be possible with cream since it mixes with spirit. I like your way of thinking! Cheers!

Instead of using the gelatin mixture can xantham gum be used as a thickening agent ?
I have never tried to make it with the Xanthan gum. I rather use Agar agar for the vegan option. But still, gelatine gives me the foam without or with very little side aroma.

Yes, I did. It's not sour or lemony at all, because I used right enough acid to start the curdling process and not too much to give any taste o the cocktail.
Cocktail Time with Kevin Kos I've seen some Americans use Pinnacle Whipped Cream Vodka and it made me think about if it’s possible to infuse a better version yourself, just out of curiosity. I'd thought about cream washing, but worried it would affect the taste. I trust you know better than me! It would probably suit Educated Barfly's Birthday Cake Redux, the original Birthday Cake Shot often uses whipped vodka, cake vodka or just vanilla vodka. Perhaps replace the coffee bitters in the cream vodka with vanilla bean, it sounds perfect!

A better White Russian is just more kaluah than vodka. Easy.
It depends on the taste. I like less sugar in my drinks but some prefer more.

How you know how much milk you need to use in each recipe for your clarification?
It depends on whether I just use milk to clarify or to add texture to the drink. usually, I go with the 4:1 ratio for clarifying.
Each time cream whipper sounds like grim reaper
