- This dish features tender baby potatoes cooked in a rich and aromatic gravy. Succulent baby eggplants are the star of this dish, cooked to perfection in a flavorful gravy. and then pressure cooked with spices, creating a deliciously infused flavor that's both comforting and satisfying. Resulting in a melt-in-your-mouth texture and a burst of exotic flavors with every bite.

Ingredients quantity
Brinjal 4 no
Water as required
Salt to taste
Turmeric powder 1 tsp
Oil 2 tbsp
Cumin seeds 1 tsp
Onion seeds ½ tsp
Onion chopped 3 no
Ginger garlic paste 1 tbsp
Salt to taste
Tomato chopped 3 no
Coriander powder 1 ½ tbsp
Red chilli powder 1 tbsp
Turmeric powder ½ tsp
Garam masala 1 tsp
Dry mango powder 1 tsp
Kasuri methi ½ tsp
Green chilli chopped 3 no
Baby potato peeled 1 cup
Water 1 cup
Fresh Coriander chopped 1 tbsp
Coriander chopped for garnish
Method
1.Take a brinjal and cut off the upper part of its peel. Then cut 1/2 part and
make an incision in the middle part of the brinjal.
2.Add water, salt and turmeric powder in a bowl, mix well and leave the
brinjal in turmeric water.
3.Place a pressure cooker in a medium flame and heat the oil.
4.Now add cumin seeds and onion seeds sauté for a minute.
5.Add chopped onion and sauté for 5 minutes until it turns golden brown.
6.Add ginger garlic paste and salt sauté for a minute.
7.Now add chopped tomato and sauté for 4 minute.
8.Add coriander powder, red chilli powder, turmeric powder, garam masala,
dry mango powder, kasuri methi and chopped green chilli mix well and
sauté for 2 minutes.
9.Now add peeled baby potatoes, brinjal and water mix well.
10.Close the lid of the pressure cooker and for about 5-7 minutes or for 4
whistles.
11.Let the pressure release naturally before opening the lid.
12.To thicken it, open the lid and cook on low flame for a 3 minute more.
13.Now add chopped fresh coriander and mix well.
14.Side out in serving bowl and garnish with chopped coriander.
15.Enjoy your dum aloo baigan made quick and delicious in a pressure
cooker!

Only small mistake chef. Aapke baingan beej (seeds) wale Hain. Baingan should be without seeds. Please REPEAT WITH BAINGAN WITHOUT BEEJ ( Seeds) thank you
Brinjals with seeds are hard ones and that is why best for pressure cooker cooking...

Hi Chef please let me know if you are using induction or electric burners when cooking masala gravies in pressure cooker. I use stainless steel pc to cook masala gravies on an ceramic electric stove and the masala usually ends up sticking at the bottom of the pot. Please , please respond thank you. I don’t even cook on high it is usually set on medium low.
WHen using stainless steel bottom pans using the masala sticks, the trick to protect them is to cook in medium flame and keep adding little water time and again, otherwise they will stick to the bottom...

Hyderabadi Mahi ka Khaliya Recipe .. ▪Ingredients :-
40-50 minute
6-7 servings
250 gm Mutton
50 gm Dry coconut
20 gm Peanut
1 tsp Til/sesame seeds
2 Onion
to taste Salt
1 tsp haldi/ Turmeric Powder
2 tsp Mirchi/red chilli powder
2 tsp Ginger garlic paste
3 tsp zeera( cumin) powder
2 tsp Coriander leaves
2-3 Hari mirchi(green chilli)
10-12 Curry leaves
1 tsp chopped coriander leaves
50 gm Tamarind
Method :-
1Cut the dry coconut and onion, then roast dry coconut,peanut,sesame seed, coriander,zeera1tsp,onion, let them cool peel peanut skin, then grind into a smooth puree ina blender. Heat medium oil in a wok, add zeera, curry leaves,add mutton saute well for minute.
2. After sauted, add ginger garlic paste, salt, haldi, mix add masala and mirchi powder, mix well for a minute,add 1cup water mix and cover the lid for 15 minutes, in between saute it to stop sticky.
3. Cook masala till oil separates, after 15 minutes add tamarind water mix well add water, let it simmer and cook for 20 minutes, add hari mirchi and coriander.. Serve Hot. Enjoy It !! Too Much Luxurious Nizami Hyderabadi food must Try ..
