Waterford never mentioned much but I loved it. I lived in Dublin very lonely place but excellent facilities there. Shops open all night. Transport excellent. Better than London it has atmosphere pubs very good.
Waterford is the oldest City in Ireland and easily the best so definitely put that on all your lists. Beaches and walks within a few miles of the City and so much to c.
Seems like the top reasons for you to go to a town are food, the pubs, nature and castles. Sums up the whole of Europe pretty well, even also my country Netherlands.
