Hey dude thanks for posting this I had fun watching you guys fish and cook up what I thought was trash fish! I've been catching a ton lately and want to try this out too.
There is nothing wrong with Hardheads!... Cut the tails off immediately and bleed them out on the boat/beach first makes them even better! They fillet different... (you blew that!...lol) and are slimy, and have stingers that is why many people don't bother with the. The meat though is Great!... especially fried. BUT... even baked/Air fried is GOOD. Nice video. Not a good fish to eat! No nutrition and thats why the fillets are dark looking. Its a hard head. Bottom feader. Its the season thats goid. You might as well cook Roaches in fish batter. Throw them back! Only good for catching.
