Ingredients
Bun Dough 麵團
Bread flour 高筋麵粉 105g
Cake flour 低筋麵粉 105g
Water 水 120g
Salt 鹽 2g
Minced beef 免治牛肉 200g
Beef filling marinade 牛肉餡醃料
Minced Ginger 薑蓉 10g
Minced garlic 蒜蓉 15g
Minced shallots 乾葱蓉 40g
Green scallions 葱花 30g
Cumin powder 孜然粉 2g
Beef filling sauce 牛肉餡汁
Xiao Xing Wine 紹興酒 15g
Light Soy Sauce 生抽 30g
Granulated sugar 白砂糖 8g
Chicken stock 雞湯 150g
White pepper powder 白胡椒粉 0.25tsp
Sesame oil 芝麻油 5g
Slurry 獻汁
Tapioca starch 木薯粉 10g

有分別,因為啲薑、蒜無炒過,無咁香。如果你想重啲味,可以用少少生抽同糖醃肉先,又或者早一日煮個肉,會入味啲

簡單啲講,高筋麵粉蛋白質高啲,麵筋製造力强,幫助完成品挺身啲。低筋麵粉蛋白質最低,但可令完成品細緻啲。而呢個比例外層挺身得嚟,入面可以較軟。用中筋麵粉就平實啲,皮無脆,但都ok

@@tarzancooks I am tired of the typical Italian cheese filling. By the way, "manzo" = "beef" in Italian. You can certainly fill the tortelloni with pork and prawns, or crab meat in a creamy sauce.
