    Hi ma'am...You r just awesome.....the way you explain..i felt like a mom explains... Ma'am I tried to make chocolates myself...
    I took van leer dark compound...But I felt it's was very sweet n less chocolatey ...So I mixed coffee with it...
    Can you help me to know which compound should I try next...
    N the codes which r mentioned on the packs are also important??
    Like d15 d45 etc...Iska b fark hota hai kya taste me darkness or sweetness me..Plz help

      the MORDE brand with vegetable oil is very helpful for the beginners, but if you want the best result then use MORDE brand with cocoa butter as an important ingredient in the chocolate compound AND DO TEMPER IT BEFORE USE, d15 or d45 means the percentage of dark chocolate contained in the product

      Tempering is a technique used to cool down couverture chocolate before using specially if u are making garnishes and bonbons

      Crush is too thin . Mayb u can add it in truffle or boil it till it thickens add a bit of cornflour maybe. Though I have never done it.

    Nowadays my chocolates r stick in moulds. Perfectly prepared so many times . But now I face this problem. I used polycarbonate mould. Please suggest mam.

      You need to clean the moulds thoroughly as shown.
      Check temperature of chocolate.
      You may have to leave the mould for a few minutes longer in the freezer.

      It's important to put the correct temperature chocolate in the moulds
      Wait till the moulds have a frosted look on the reverse side. Then remove the chocolates by turning the mould over and banging it a bit hard

      No pls don't
      Just wipe them to remove any dust.
      Tips
      Chocolate should be room temperature
      And check to see if the mould has become frosted. Takes ab 10 mins.
      I always put my mould in the freezer.

      It's a bit too thin mayb u can thicken by boiling it or add some cornflour but dilute in lil water first

      Don’t keep the moulds in the freezer for too long. If the chocolates have moisture just leave then for a few hours in normal temp they should go away.

      It really depends how ppl store them
      Fruit filled chocolates last a week but if kept in the fridge may last longer .
      Chocolates with nuts last longer .
      The best thing is to make a few of each filling and leave them for a week and then taste them 🌷pricing u have to take into consideration all ur costs plus ur time n energy then add ur profit

      If u have used too warm chocolate the chocolates won't come out.
      Also freeze the chocolates for a good 10 mins or until the mould becomes frosted

      Depends on the climate.
      If u keep in cool condition should last 5 to 6 days .

    Just a quick one.
    I half filled the moulds and added a synthetic blueberry flavour instead.You can see the flavour seeping out from the joint in a few.Small tiny litte droplets.Can you help?

      Yes that s y u need to make the shell first and then add the filling
      If ur filling is too liquid it will seep out
      You need to use a thicker filling

      @@ManjuSethia_SCS The ammount of chocolate that gets wasted while creating shells like you suggested is scandalous, I dont have the heart for it.Could oil based essences be an option?Do they come in hazelnut and mint flavours

      You can use oil based flavours but Jimmy Mithun gets wasted at all
      You can reuse the chocolate

    Ma'am if we are making champenne bottles how we are going to stick the two sides?

      Heat a metal tray and place the bottle shells lightly on the warm tray and move it around very carefully you will see that the sides of the shells have melted a bit ,now quickly stick the 2 shells firmly together. Keep pressing for a few minutes. Best to wear plastic gloves.
