- Hi Everybody! Here's my quick and easy way to make the best VEGAN MAC N' CHEESE!
This one is super simple to put together, and instead of using nuts or carrots, we're gonna simply use some Vegan Milk, Butter and Cheese! This sauce comes together in the same time it takes to boil some pasta so it's a perfect lazy weeknight meal!

@@alex30208 You can usually find it in the health aisle, under the name "Nutritional Yeast" or "Yeast Flakes" or something along those varieties. It goes great in things like soups, I love it on my baked tofu bites especially. Once you find it and add it to your dishes, you'll wonder how you went so long without LOL.
Absolutely!! That stuff is amazing on EVERYTHING. Salads, soups, “meat”(obviously vegan meat), dressings, burgers, stir fry’s. Literally anything. Apparently even cereal but I haven’t tried that. lol.
I can’t bring myself to eat it. The smell (& taste) reminds me of fish food! 🤢 If I can taste it at all in a food I just can’t eat it.

I made this recipe tonight for dinner and it was amazing! BTW if you're using daiya shredded cheese, don't use as much as the recipe calls for. Daiya gets really thick and it doesn't pour so either don't use as much cheese or add more milk.

I made this sauce and put it on roasted veggies tonight. I used violife shreds and it wouldn't quite melt, so I just used my immersion blender to get it smooth. 10/10 super easy and good
Ah yes, I should mention that! I find that some pre-grated cheeses won't always totally melt, or it will take a long time. Immersion blender is definitely needed sometimes, so thanks for reminding me. Glad it came out good!
Tried today. Thought it was gonna be gross but Turned out good, I must say. I also added seasoned bread crumbs and plant butter mixture -spread over the top and baked for 15 to 20 minutes. Also I used the Chao creamy vegan cheese shred which doesn't melt that great but follow the recipe and let it sit for a few minutes and it will melt into the cheese mixture smoothly. Hope this helps anyone who may have any issues! Thanks thee burger dude 😋

This takes me back to 2012 when I wasn't vegan and watched chef John from Food wishes (I don't know if you know him). But when I went vegan in 2014 I never looked at his channel anymore, but I'm glad I found a vegan chef with the same chill vibe and style. Keep it up!

Yes it's totally good in the fridge for like 2-3 days! Shoot, I should've mentioned that in the video! But yeah I like to have some handy to throw on tacos, breakfast sandwiches, potatoes etc! A little dollop will do ya!

If someone is. A,ing this for the first time I’d recommend keeping it simple. You can always add ingredients on the next batch (hint: red peppers) and even combine the two batches if you actually have leftovers.

Potato smiles on mac and cheez, you're actually a genius.
I like my vegan cheese sauce with broccoli and chickpeas or shirataki tofu elbow pasta.
Try Cashew milk as a base, Miyokis Vegan Butter, kite hill cream cheese, and a vegan cheese of your choice melted all in a pot to make a delicious creamy cheese sauce! P.S. dont use to much milk and butter so it is nice and thick, add as needed!

I’m pretty sure you could make this gluten free with gluten free flour and gluten free pasta. Also if you do have sweetened vegan milk you can add lime juice.

Yeah! I would just add in a little at a time and season to taste. Maybe start with 1/2 tsp.

They are made by McCain, they’re called Potato Smiles. I like earth balance, miyokos, kite hill for butter.

My dad makes the best gluten-free/vegan Macaroni and Cheese whether he makes it with Fusilli or Penne.
I dont use wheat flour is there a gluten free alternative?
I haven't experimented with GF flour yet (I plan to in the future) so I can't make a suggestion!

Looks very good....but I found a much simpler recipe: Violife shredded vegan cheese; unsweetened almond milk and elbow mac. Everything is eyeballed....whisking the "cheese" sauce in crucial. A pinch of salt (to-taste) and voila! Or should I say "Violife"?

Hmm, that's weird, I normally use all of the sauce for the mac, but if you have extra then you should be able to freeze it, but I can't guarantee it as I've never tried (though I really can't imagine what could go wrong). If I ever have leftover I usually just keep it in the fridge and use it on every meal haha.
@@TheeBurgerDude hah, yea I already came up with some ideas. Starting with a queso dip. But I used about half for 8oz of macaroni. And that amount was spot on. So maybe just my preference? Either way, it was delicious
Oh cool! Yeah that sounds like a plan. You can literally use it for anything you'd use a cheese sauce with, potatoes, broccoli, nachos. I've even just put it on a burger or a breakfast taco. And yeah, now that you mention it, when I was testing out this recipe, I made it with a pound of pasta, and that didn't feel saucy enough, so I halved the amount and that was just right. I should add a note to add the sauce until you get the consistency you like and then save the rest. Glad you dug it!
@@TheeBurgerDude Update: I made a quesadilla, it was great not having to wait for the cheese to melt. Just got the tortilla to the right color on both sides and that was that.

Man, I just throw a bag of ched shreds into a pot of simmering soy milk and stir every couple of minutes. Boom. Delicious cheesy sauce.
Yeah, this was before I realized you don't really need a roux since vegan cheese usually has starches in it. I actually prefer just doing cheese with some sodium citrate, that's the best way imho! I have a hamburer helper video that goes over that process.

My problem with these cheese sauces is that Daiya and Violife (as every other cheese like that) not only taste weird to me, they also feel like melted plastic on your tounge, and they even have a plasticy after taste.
I'm usually not one to go for the healthier versions of junk food, but I just dislike these cheeses so much so that I will opt for the potato-cashew recipes over the store bought cheeses every day.
I think Chao is made out of fermented tofu, maybe if you're like me but you want this recipe to work for you, you should give it a go. I've never tried it because we don't have it where I'm from, but I'm just trying to think of solutions for my fellow cheese-decliners (can you find a better phrasing for that? 😂).
Anyway, would love to hear your thought about it or any suggestions you have on how to make this delicious-looking recipe to work for me, too!
Hmm, I don't seem to have that problem with these cheeses. Daiya has improved quite a bit since I first tried it a couple years ago. I've given this mac n' cheese to non-vegans and they love it too, so I dunno! I would stick to the cashew based cheese sauces if you don't care for the vegan cheeses though!
