Hope you enjoy, Liz. I would actually add a tad more Whisky my thought. It was very subtle and not a huge kick. Lovely dessert indeed. Yes I enjoyed it very much. Best, Rik

@BackyardChef The whisky is ideal added to the oats. Some people can be put off with the oats. You've made a master piece.

Oh my ... my Scots-Canadian gran used to make this and I never knew what to search for to get the recipe. This is on my "when the wild raspberries are ripe" list.
There is a MEXICAN version! It uses fresh strawberries, "crema" (a sort of thick clotted cream), a soft cheese (much like ricotta), honey and - amazingly - toasted rolled oats soaked in dark rum. I forgot the name of it.

I make this every year for Burn's Night in Austin, Texas, USA. I use a combination of whipped cream and vanilla Greek yogurt. I love that all the ingredients in this dish would have been available basically in the wild (berries, cream, honey, oats, and, of course, whisky) in 18th century Scotland!

Years ago I made a cranachan cheesecake for a Christmas dessert, it was awesome. Thanks for the video.. I used oats and butter for the base of the cheesecake and the cream and cream cheese with the honey and raspberries in the mix, and a light drizzle of honey on top as flourish / garnish. The whiskey was also in the cream cheese mixture.

I grew up picking raspberries and strawberries from the farms just outside Brechin in Angus during the school summer holidays. The money we made all went to buy our school uniforms for the next term. Sadly all the berry fields are long gone now, as they all use polytunnels these days. Looks fab Rik! 👌😀🏴󠁧󠁢󠁳󠁣󠁴󠁿

When I worked in a hotel in my teens we had a wonderful pastry chef and this was one of my favourites. She used to make a caramel then add the toasted oats and after spreading it out on a tray she used to break it up so it was in small crumbs. She would mix the cream cheese with a little yoghurt as well as cream and use the honey and whiskey in that and layer with the raspberries. When she did the layers of the caramelised oats she added a touch of whiskey too. It was always a best seller on a Sunday..

Cranachan, in my humble opinion, has to be the ruler of all puddings/desserts. Though to be honest whenever I make it I just use whipped extra thick double cream, raspberries, toasted rolled oats and honey. I don’t generally bother with the crowdie (which can be easily substituted with ricotta) or the whisky (I’m generally not fond of alcohol in my food) though…which I suppose some would think makes me less Scottish but I don’t really feel that the whisky especially is needed, though it can add an earthiness and familiarity (especially if you’re using a whisky distilled either locally to where you live or where you grew up).
It surprises me every time I have it how light and fresh it tastes and feels…and is so ridiculously moreish.
