Time Team S14-E06 A Port and Stilton, Stilton, Cambridgeshire

- In late March 2006, a potter and keen fieldwalker, Richard Landy, reported his discovery of an almost complete ceramic Roman cheese press, used for making goat's cheese, to his local finds liaison officer (FLO) under the Portable Antiquities Scheme. What made it all the more special is where he found it - washing out of the side of a two-metre-deep ditch in Stilton, Cambridgeshire.
This cheese press is just one of hundreds of finds Richard has discovered from the area around the ditch. These include Samian ware, mica dusted ware, Nene valley ware, local Roman coarse wares, medieval green glazed pottery and other objects, including Neolithic polished axes, animal remains and Roman pottery-making tools. Coins have also been discovered by limited metal detecting.
Time Team had the usual three days to dig through the two metres of silt that has been deposited on top of the Roman layer over the past two millennia, to investigate the site and work out how it connected to the rest of the Roman Fens. And of course they couldn't resist trying their hand at making some Roman cheese as well.
Perhaps Phil's smaller kiln was used for special pieces of pottery, maybe commissioned pieces for wealthy people from miles away.
- I really admire the digger drivers... they do such a fantastic job of removing shallow layers of dirt, harming as little as possible as they do. To me, they are the 'unsung heroes' of the dig.
I've often wished that they had made a 'behind the scenes/making of' video showing how they plan, organize, script, direct, film & edit an episode. I think this might have been an interesting one to see, especially the scripting.
they did. Look it up, it's on RUclips
@@brettbrown9261 Thanks muchly, it was very interesting & enjoyable.
I hope Raksha (hope I spelled that right) has had a lovely life. I hope they all have. My favorite show.
Aaaaaaand continues having one. Whoopsie.
@@shamsam4 you could always google here and see. Or watch her new shows. Or follow on twitter. It’s not as though any of them are in hiding.
This show encapsulates much of the interest that I have in the world. I'm including all the effort, the finds and the wonderful relationships. Not to mention that it is expertly made.
hahah. Francis says "this is occupation with knobs on." I love it.
With only three days, and their usual competence and dedication, Time Team slices their way through the Great Cheese Mystery.
...omg lol
Haha, I love that Tony couldn't get through the introduction without laughing, lol. I'm from Wisconsin, Tony, cheese is serious business. XD
I'm a cheese eater. Cheese is serious business. I didn't know that Stilton (yum!) isn't made in Stilton. I knew I could learn something from this show!
Sarah Coleman he said Stilton Cheese and my mouth immediately started watering. True Stilton is just one of those spectacular cheeses in the world. I also lived in Tillamook for a decade and am a dairy addict.
I found out it takes a year to make a cheese :0
I was just wondering if "how long has cheese had a roll?" was one of Tony's puns....
(role...)
Being from Wisconsin, also, I agreee!
I've been binge watching these episodes for the past week. Thank you for putting these up for us all to enjoy. I live in the US and I've never been so envious ☺️
Me, too!
I was lucky and grow up with these programs now living in the US it makes me even more interesting in seeing them again. Great when visiting home and some of these locations.
omg, those pots Rick the field walker/master potter made are AMAZING. That one decorated with animals is gorgeous!
Always, always, always talk to Stewart. He can explain it all.
The ditch/flagon trench is here:
52°29'37.9"N 0°16'46.7"W
The kiln trench is still visible here:
52°29'52.5"N 0°16'17.7"W
And the fields all around are full of crop and parch marks that look very intriguing.
I love the team and all their specialized skills, but Phil's short shorts make me laugh every single time.
Bring back memories of the 80s.
hilarious. tony barely made it through he intro without really cracking up
+Janine alderete The cheese roll did him in!
Other than the people on the program one thing I love the theme. That sells it because of its very unique piece of music
Blessed are the cheesemakers...
Because without cheese tacos suck ( Roman tacos?).
You beat me to it..!!
Well, obviously, this is not meant to be taken literally. It refers to any manufacturers of dairy products. :-)*
Amen to that Brother! 🙏🙏
Oh, isn't that lovely!
Mmmmm broccoli and stilton soup... Yummy!!! Try it, you'll like it.
Indeed. Try some slabs of Stilton melted on a jacket potato as well ;)
Mmm...warm weather gig and Brigid's tiny shirts!
I loved living in Cambridgeshire in the 80's before it was so built up. And I used to drive on Ermine St every day. We found old sites to visit all the time.
Stop stepping on the lettuce! lol
When I grow up I want to be Stewart Ainsworth.
Stewart the original "Landscape Whisperer"
You can be one now. Just change your name.
@alanrtment porter I am 62. I'll be your understudy.
d'you know, i was just thinking how incredibly cool it would be to have his skills. i'll be the understudy's understudy, i'm a piffling 47.
@@jonnylumberjack6223 Since all the better positions are already taken, I'll carry your chair.
What fun! One of my all-time favorite episodes!
Truly a remarkable documentary Love this series Thanks for posting
great work time team entertaining fascinating to see history coming out of the grounds shedding new light on what it took to flourish like bright stars in the night sky
It was nice to see Francis enthusiastic about something Roman.
Blessed are the cheesemakers.
Blessed are the *_Monty P._* team!
Blessed are the Cheesemakers.
Guy in the background at 6:46.
:D
Now I REALLY want some of this world famous cheese!!!
Not after you taste it,but to each their own taste
I like Time Team. I used to watch it in the 1990s at my mother in law's house when I visited Peter who is now my hubby.
21 is the age we acquire wisdom teeth.
Metres come from the French Revolution. Meters and inches are mentioned in one sentence! Are we the only age to use 2 different systems of measurement at once? Mad! Just imagine if the cathedrals and monasteries were built by a mix of inches and centimetres!!!! I prefer to use Imperial. Good Imperial. Based on nature. The guys who invented meters centimetres had their head chopped off, I think. So did M Guillotine.
Most Time Team is based in the south of England. In Yorkshire, we didn't get many Time Team visits. I would like them to have come to Fountains Abbey.
Close.....

Ah..but it's still all to play for!!
Is ANYONE here for the archeology or is it JUST the flesh??
Good to see you again Francis!
AHH! so this where blue cheese comes from! YUMMY :D
No it's where one type of blue cheese comes from
Omg Tony cracking-up right before opening credits is the funniest thing ever
How long has cheese had a "roll" in Stilton's history ? X>D
The budget for Champagne on this show must have been tremendous.
"Break out the Champagne"...lol
The reason I never became vegan was that I refused to give up Stilton. Finest cheese in the history of cheese. Even finer is one made from unpastuerised milk, called Stichelton.
To visually appreciate stilton cheese, I recommend watching the programme 'Chef!' starring Lenny Henry. Look for the episode in which Chef buys black market, unpasteurized stilton cheese to feed to a famous French chef visiting Le Châteaux Anglais. First, prepare to laugh yourself to tears!
The more I watch this show, Helen's legs just get better and better.
Peter Karargiris Glad it's not just me that thinks Helen is a bit of a hotty.
I can see her cheeks blushing bright red as she reads this.
Which cheeks? ;)
I was thinking the same thing. Does that make me a pig? Or a normal Straight type of Man? I'm thinking the latter.
Ya'll Simps not even gonna acknowledge Phil's gams in his lil Jean shorts? Smh.
Love the video !
I've wanted to try a ripe stilton ever since reading an old horror story ages ago by the same name. I found it on Amazon but I guess it's a little out of my league as they wanted like $40.00 for a few ounces of the stuff. Guess I'll stick with seriously sharp cabot cheddar, lol
Save up and get some. Proper stilton is so worth it. I buy myself a pot from a specialist cheese shop at Christmas and eat it with crackers at night when my husband is sleeping so I don't have to share 😂😂😂
Used to live in the village across from Stilton! Wish I’d known they were digging there, I’d have had to have a nose!
Stilton : an absolutely world class cheese!🧀😊
6:51 And did you do that Geophys?
John: Tony, you jammy goit.
Cheesus!
..the moon is also made of cheese.. I wonder if there are any Roman cheese presses on the moon??
LOL!
Well, if anyone would know, you'd have to ask Wallace and Grommit. :D
This one was particularly amazing. Do you know if they ever went back to that site? Best to you and yours.
I like Tony, he ask the questions that I would.
With those bodies buried in the field adding fertilizer to the plants which are leafy you can almost say soil green = people...lol
It's on sites like this that I bet the guys were wishing for a time machine. lol
... cheezy ! Dig it boys !
Philippa Walton beautiful, I hope to see more of her.
Either the crops in the field have already been harvested or farmer Hicks was generously compensated. Anyone know? It looks like a leafy salad type crop.
That's "Ground" corn.
I know it's wrong but when Helen Geake wears the little shorts I find myself thinking unscientific thoughts.
She never disappoints does she?
Same!
I'd like to know if the town was first called Stilt Town.
Originally Stylton as it was a marsh area and people used to walk around it " On Stylts "
France had an area like this too. tripod stilts...

Cheese ... better living through microbiology!
Jim Dille Indeed, but most microbes are not so friendly to us.
Not true. The vast majority are benign to us. Very few are pathogenic, and there are several without which we could not survive.
+Jim Dille Cheese, bread, and beer! Nice trio!
Somebody PLEASE fix Stewart's collar!
A pity that, once again, three days was much, much too short a time for digging up the whole story.
They were never there for the whole story, moron.
@@Invictus13666 Take a good long walk to get rid of your aggression, please. Don't call people morons for no good reason. Keep up a bit of civilisation.
@@ronaldderooij1774 I had a good reason.
I know I am about 10 episodes late, but I want to ask if Helen is the "replacement" of Carenza and I think I saw Jenni last episode. She'd been away for a while!
Of course, Tony, John, Stewart, Phil, Raksha, Bridget and Ian are still there as always :))
From memory I think Helen and Carenza overlapped, however when Carenza left the programme Helen's role was elevated to that of a replacement
Helen is “Dr. Babe” to me.
I'm not meaning to sound sexist, but she is hot! (One would have to be blind not to see it.) This is meant more as a compliment. I love her smile. There is an element of mischief there that to me is very alluring. I am secure in saying this all the while respecting her as a very accomplished Woman. Kudos to her!
She looks like a 12 year old boy.
@@thomaspatton4401couldn't have said it any better.
those pots made are absolutely beautiful, what a craftsman!❤btw, the drawings ..are they still Victors'?or was this after he passed away(not seen in this episode?)
Sounds like everyoneis hasving a good time, the guys that is
Hearing whine from the females I don't 😊
Tony revealing that the cheesy joke was Phil's 🤣
Great episode, but the question remains unanswered, "Who squeezed the cheese?"
good one!
Why isn't Wallace in this program?
... he was drawn and quartered in 1305
That's a beautiful flagon in the opening sequence. But I what I want to know is, does it have a dragon?
I still think 3,000 year old cheese would be one mustyfella ... ;)
What kind of cheese is made backwards?
joseph fulks In ten months no one has said "I don't know. What kind of cheese is made backwards, Joseph?" Well, I'm saying it.
Edam
Argh! Well played, sir.
Excellant!
since that episode was 9 years ago, did Francis go back there and with the help of the local achelogic community, dig out those - rings -?
Is this where Stilton Cheese is from? Stilton cheese is one of my all time favorite cheeses! Oh how disappointing. Oh well, the cheese is so delicious no matter where it's made. I think you should send some of that delicious cheese to Salt Lake City, Utah, USA
The centre of production of the Stilton cheese is Melton Mowbray, along with pork pies.
Question when they find human remains do they report it to the local coppers just in case it turns out to be more modern than first thought lol ???????????
They do if they find more than 3 teeth. It was on another episode.
Don't be silly the Romans were making Gorgonzola........
wow what a surprice, but you need more time
Oh ghod, the Geake Geeks must be going nuts with her rolling around in the mud in those little hot pants….
Nicked them from Phil perhaps?
Crap! You had to go there didn't you?! Now I'm fighting down the vision of her (Helen) rolling around in the mud! Damn! Thanks! Still, I suppose there are far worse things. "There's always room for jello!" ;)
...settle down you three or I'm turning this car around
The one I like is, Don't make me come back there! While your driving. That usually gets there attention.
What will future archaeologists make of the remains left by a Tilley hat after the cloth has rotted away? A ritual object?
If Francis is on the dig it's a sure bet he'd claim its ritual...
jesus... forget the history, Helen in those short tops and low rise jeans... WHEW... i don't know how the guys got any work done.
They thought of the history not making new history
Lift the eyes upwards
First aired February 18, 2007.
what kind of beer do you think Phil will pair with the Stilton?
Whatever kind they got!
What's the difference between Stilton cheese from what's classically called ' blue cheese ' ?
Stilton is A blue cheese*, but there are others. The actual "Stilton" label, however, is a PDO.
For those who are not from the U.K. or Europe: a Protected Designation of Origin (PDO) is the name of an area, a specific place or, in exceptional cases, the name of a country, used as a designation for an agricultural product or a foodstuff.
It's like a patent on calling your product by a recognized name. Examples: By European laws, sparkling wine cannot be called Champagne unless it actually comes from the Champagne region of France, and a Melton Mowbray pork pie must come from the area around Melton Mowbray. To carry the name Roquefort on a cheese, it must be made with a specific breed of sheep's milk, in a prescribed manner, and aged in specific caves in a specific region of France. (There are a lot of PDO-type restrictions on cheeses.)
The idea of 'trademarking' this kind of name has since spread to other parts of the world. The Chinese have a similar designation for certain sauces, Mexico protects their vanilla bean and extract products, and in the U.S. the name Vidalia onion has a geographical restriction as well.
There are two or three fungi which are used in blue cheese making. Stilton actually has the same fungus in it which makes Roquefort cheese blue, however Roquefort is sheep's milk and Stilton comes from cows.
The ironic thing is, that the town of Stilton itself isn't in the geographical designation for "Stilton Cheese"...so a "Stilton" made IN Stilton...couldn't be sold as a "Stilton".
*Stilton also comes in a white variety, without the Penicillium roqueforti fungus added in.
I wonder how much they pay farmers to dig up their fields.
There's nothing like 1000 year old cheese! Not stinky at all!😂
Wait, wait! WHO CUT THE CHEESE!!!!?
On the Eenlund Wooterways. At least that's what I heard
haha skeletons = "skellies" 42:10
Tony is not as sarcastic in later years, thank goodness
...skellies?!
Oh my all thise vegetables..
They found Jimmy Hoffa lol
I hate to be "that guy" but Helen is so fine! What a babe!
If red clay signifies it's been burnt, I wonder how they'd react to seeing clay in Georgia or Tennessee Where the clay is all red, lol.
+Rebel9668 Well, there was that Yankee war criminal who passed that way 1864 and set a few fires.
+Stannous Flouride He never made it to West, TN, lol. Even the paved roads there are reddish tinted. I've even seens areas in Washington County, Indiana with red clay....I wonder if that occurred when John Hunt Morgan rode through, LOL.
Could explain a lot of red earth around the world. We _are_ a pretty pyromaniacal species.
(btw-I struggled with that phrasing. I thought about just putting 'Sherman' but didn't want to open old wounds)
No worries. I'm from Tennessee but I invaded and occupied southern Indiana....now I'm surrounded by Amish and Hoosiers, lol.
they would burn some to see what colour it turns of course lol
Rubber tire or Backhoe*
maybe it was an ancient race of skeleton people
Helen Geake is beyond hot.
You speak the truth
I cut some cheese once.
I've done it more than once!
White Stilton is great but the introduction of that ghastly mould makes it bloomin` awful!!
Put a drian plate oof straw at the bottom
U will make the base to hold the mold
I really like TT but they jump to conclusions with very little or no evidence in nearly every episode. Thats the problem when you have only three days and a tight production schedule.
Tony does sometimes leap from an archaeologist's theory to "We've confirmed we have a ..." but the archaeologists are expert at reading the evidence they find and cross referencing it with other more conclusive digs. A more comprehensive dig would never make it on to tv because 95% of it would be mind numbingly boring.
@@wbrewer5352!Yup, Ive been on digs and never saw anyone running around like a chicken with its head cut of like Tony. LOL!

What a "cheesy" episode...
These guys are just a bunch of party animals who do a little archaeology on the side.
Zed Williams, stupid comment from the poster child of ignorance.
That’s academia for you.
I am definitely getting cremated, I don't want to be dug up and gawked at, let them rest in peace. Take pictures, and then cover them back up.
Tony, Skeletons do not have "sex". They have gender. Please use proper English. [Aussie in BC]
Actually it's exactly the opposite. Sex is biological, gender has to do with how a person presents themselves. You can determine sex from the skeleton itself, but not gender.
