Just ran across your video and wish I could have some time back, we were taught to cut up chicken in the same way, our mom was one of the best cook's in my opinion and she was one that made her chicken dumplings but she would put her ingredients in the bottom of roasting pan and then her homemade biscuits were placed onto the top of the chicken and vegetables etc.and would bake in the oven to make a nice comfort meal for her large family and whoever happened to be stopping in,it was like they could smell her cooking something amazing and came running, and we could have one or two of the biscuits that were baked on top with the chicken mixture scooped up along with the biscuit topping. The way you're doing your chicken and dumplings on the stove top is like a best friend of mine who passed away in 2024 had done and she would buy dumpling stripes from the grocery store and people were amazed at how delicious her chicken dumplings was and always asked for her to make more. I am 72, but i haven't cut up a chicken in many years. If i buy a whole chicken, I roast it. So my chicken and dumplings are usually made from a rotisserie chicken. Thanks for the lesson

I agree!! Cant stand doughy dumplings. They always seem mushy to me as well. As a short-cut if time constraints etc, you can buy frozen flat-dumplings in most stores. They do have a little coating of flour on them so it thickens the broth just fine. You do allow them to thaw a little bit (not fully) and can drop them easier if still a little frozen.

Why do you wash your meats? When you cook meats to the right temperature the heat is going to kill any germs, salmonella, etc. The CDC recommends not washing meats it can contaminate surfaces and other foods. I’m almost 68 ( March 11) and have never washed any meats neither did my Mom or grandmother but to each their own if it makes you feel better👍
I always rinse my meats. Then I bleach the counter and sink after I’m done. And remove all towels I may have used. lol I blame my Homemaking teacher in high school. She drilled cross contamination in our heads.

Momma taught my sister and me how to make dumplings. Her mother taught her, and my grandmother's mother taught her. Bless you, Ms Betty, for sharing your recipe. The pronunciation of "wrench" was for "rinse" and the pronunciation of ""warsh" was for "wash". We all knew what she meant. She used Cream of Chicken Soup with Herbs as her seasoning verses saulted onions, celery, carrots, peppers if desired, garlic and parsley, oregano, basil, rosemary and thyme. As she said, the flour from the dumplings thickened the broth. I generally boil the whole chicken which makes it easy to pick it from the bones. A lot of flavor in the broth comes from the bones. Great recipe. Great job washing your hands and using your cutting board only for the raw chicken. Please remember to clean your counter, sink and pots with hot soapy Chlorox water.

Necessity because she had to work at night, bartending and waitressing, due to a really bad injury Dad had at work. My dad taught me about 7-8 years old. I am left handed he was right. Always made me stand across from him so what I saw while looking at him I did with my left hand. A super way to teach. Helped not having to watch him do whatever a dozen times. He has since passed but was fantastic cook and took care of three little girls after my mother's Illness took her out of the home.😊
When I was a young bride, I got a whole fryer. I had no idea how to cut it up. I ended up cutting off the wings and legs. Then I threw away the rest. My granny had a fit later when I told her what I had done. She said, “Kathy Lynn! You threw away the best part of the chicken!”

We make ours with chicken breast and my mama also boiled chicken fat to make her broth richer .I use Swanson chicken Broth I also add yellow food color to make them prettier for a dinner parties or get togethers . Also do use self rising flour or all purpose to make your dumplings? Thanks for washing the chicken Mrs. Shan because most don’t, they just start cooking ❤so Mrs. Shan you don’t use any seasoning, just the can of cream of chicken right.
I do both. My husband loves chicken legs. So i would buy a 4 pack of legs and a 4 pack of thjghs. I would shred the thighs, take out bone and skin, leave the legs bone- in how he liked it, skinned of course. I also don't like the fat and skin left from boiling so strain my broth as well. When I boil I do add a little spice makes the meat and broth more flavorful. Salt and pepper the peices and add a teaspoon of curry powder and some parsley flakes to the water with the boil.
We call that chicken n slicks. After we cut the slicks we pop them in the freezer for about a half hour. Then we take them out and cook them in the boiling pot of broth. So yummy.
I’m new here. When I make chicken and dumplings, I have to make 16 quarts for family and friends. I do make my bone broth on a different day and freeze my broth, so it’s waiting for me. I start with 15 cups of flour.
My goodness. Is that your daughter recording for you? Not sure I would be steadfast enough to do this if my mama asked me to. She would be giggling, I would be giggling. Pretty darn sure brother and sister would be giggling. Just a dang family of gigglers! We are a family of southern gigglers. Happy, sad, nervous or mad....just giggle ourselves through it.

I understand your house your rules but if you are putting out a video to be educational please forward USDA guidlines which say not to wash raw meat. Also you should never cut toward yourself as the knife could slip and cause injury.

No need to rinse chicken or any other meat as you can get small droplets on surrounding surfaces. This contaminates whatever the fine droplets touch.
