A moment of silence for that one bowman that explored the area then promptly died

Build a shrine in your capital, it will reduce unrest by one (same as 2 units) allowing to take more units out of your capital. It will also give you a fair deal of extra mana, allowing you to summon more units.
As for what to summon, you should get some healers, they are very good at keeping your other units alive.
I recommend 3 units of swordsmen, 3 units of bowmen, 2 units of healers and a unit of munks before attempting to settle another city. Maybe throw in som fanatics if you have enough mana. Also prioritize the swordsmen when buffing, as they are they will always be the first to be attacked, and you don't have any spells that really help ranged units much.

Spellcasting AI is pretty unintelligent. Doesn't matter much with offensive spells or summons but buffs and heals rely more on choosing correct targets. Caster behavior can be changed in Battle Setup but that probably wouldn't be much help in this case.
An alternative way to expand would be to make a larger army and take the neutral city to the north-east but it's likely its garrison has grown too large by now and there's walls. Sadly Holy Magic doesn't have any early summons that are good for dealing with walls. Maybe it's still worth scouting it out though. If you lucked into getting a caster with just 1 astral skill Phantom Warriors would easily take a walled city defended by just basic units.
