Today I got a BIG eggplant at Kroger for 50 cents. I looked for recipes on YT, and found this one. I just made this, and it is in the oven for 5 more minutes. I also had a small zucchini I needed to use. I have Vidalia onions, so I used one of those. I followed your layering instructions, adding a layer of sliced zucchini after the onion. I didn't have ricotta cheese, so I substituted cottage cheese to which I added a little sour cream. I did have parsley flakes and pepper flakes. I had a package of shredded cheese, it was a four cheese blend and I used it, adding the oregano. I actually had bread crumbs, but if one has Italian croutons they could be crushed and used instead. I dotted the top with pats of butter instead of anchovies. Okay, I have to go take it out of the oven now. I'll let it cool awhile and taste it. Thanks for uploading this recipe.
Looks like another winner. Gotta try this. I'm still enjoying your Breakfast Ramen Soup. Make at least once a week, more often when the weather is cool.
Looks fantastic.....maybe without the anchovies......but I'm thinking maybe roasted red peppers instead OR maybe just skip it all together, and make it " plain " . I always have a bumper crop of eggplants, so I love eggplant recipes.

Thank you for watching Eliza! The most common way I use eggplant is cubed and cooked in a spaghetti sauce, or in pasta without a strong spaghetti sauce. It does not have a lot of flavor, but it is good. Last year I grew some outside. This year I planted rhubarb it it's spot.

What a way to cook/eat vegetables!! but then again,,,you could put that ricotta mixture on a shoe and call it dinner!!lol added to favs/I enjoy eggplant as a main course. Is there a difference between Japanese and regular eggplant besides the size and I noticed that you peeled the junior version of eggplant?? Thanks dear....can't wait to eat healthy!!lol PS..I love your voice!!
Thank you my friend! Everybody does not like eggplant, but I do. The size is really the only difference. Both varieties have quite a few seeds. I am not sure, but maybe the Japanese is less bitter. I saw them on a Farm Stand, yes from a real farm. You do not have to peel, but I mostly do because they are easier to eat that way. ~Michael :)

I was making you a meat recipes when I was cooking for my mother but I am vegan and I can turn any of your recipes into vegan food. I love this casserole and you are still my favorite RUclips cook! 🍳
Ingredients:
1 pound eggplant
salt/pepper
olive oil
thinly sliced onion
8 ounces shredded mozzarella
1/2 teaspoon dry oregano
1/4 cup parmesan
1/4 cup romano
6 ounces ricotta
1/2 to 1 teaspoon dried parsley
1/4 teaspoon red pepper flakes (optional)
4 or 5 anchovies plus the oil (optional)
1/4 cup bread crumbs
greased 8 X 8 baking dish
If that's not a yumfest, I don't know what is!! First time I've seen eggplant casserole without marinara sauce -- I like it!

You could also use a splash of fish sauce (Nam pla) which adds the umami that you get from anchovies. Good recipe!
