I love eggplant. The thing What I love about eggplant is that if it goes in the fridge over night and all the flavors meld together it is even better the next day especially with eggplant parm or Componata. OMG!
This dish was absolutely amazing, I had an over abundance of Japanese eggplant from my garden, I used about 15 of them and then I made another batch for my husbands fire station. I did mixed in parmesan and a little bit of crispy dill potato chips with the breadcrumbs for the topping. everyone loved it !
This is a great bacon hack: while you are frying the bacon in a skillet add water. The water keeps it from splattering and cooks the fat quickly so it gets cooked the same time as the meet part. The strips stay flat. As the water steams off the bacon will fry evenly and gets crisp so the whole slice of bacon gets crispy. Try it this really works. Then drain on paper towels. Bacon fat cooks slower than the meat part so the fat won't stay rubberly.
You did a great job but next time may I suggest you boil the eggplant with the skin so it's easier to peel & mix the cheese in like if you was making macaroni and cheese..😉
