We also had lambs and ate ground lamb meat in place of ground beef...again I haven't had it in years and wish we could afford it. Thanks for sharing one of your families favorite recipes!

You so funny...you said a lot of people put the rice in the pot with the sauce. This as you know is a South Louisiana dish. When i say south im talking gulf coast. New Iberia where i was born, Cameron, Pecan Island, Avery Island Houma and of course New Orleans. The idea of mixing the rice with the sauce serves two purposes. 1st when you have to feed 15 people or 1500 you need it to go a long way. The rice is somewhat of a filler. Cajuns love rice more than Asians lol. Secondly everyone gets it the same way...so no picky stuff. If its to hot for the kids you give them a PB&J sandwich lol. Good video...i love game meat especially rabbits.
Rabbit is quite common in Germany. You might not be able to get it at every supermarket but any half decent butcher will have it available at least for preorder. And in acceptance it is between poultry and venison. In general we eat a lot of different, also ‚wild’meats in Germany. 😊

Hi Sarah, while I do live in northern Arkansas now, I'm a cajun from south Louisiana. This recipe more closely resembles a sauce pequante (pronounced sauce pe-caunt) which can be cooked with any kind of meat. It has very little in common with a jambalaya. Still looks good though!
I don't have a written recipe. It starts with browning your meats in a little oil (meats can be just about anything and combinations, chicken, pork, rabbit, etc.) then add smoked sausage towards the end of the browning. Remove and sautee seasonings like onion, garlic, peppers, celery. Then add it all back in the pot with some stock and your rice and season with Tony's or whatever you use and bring to a boil. You need to have twice the liquid as rice so it cooks right. Once it's boiling, place the lid on and turn fire down to a simmer for about 25 minutes so the rice steams in the mixture.
I live as far south in Louisiana as you can and this isn't our typical jambalaya. However, i will try adding rabbit in our jambalaya recipe. I may even try this too!
I'm doing this with the next rabbit I shoot. My whole fathers side was from Breaux Bridge, Louisiana. But I live up by the Canadian border. It will be like connecting both sides of my heritage. I've been discovering a lot of knowledge that I know I would have passed down to me if they were still alive. thank you.
Nobody in Breaux Bridge ever cooked jambalaya like this. Not even drunk or on crack. This is what Yankees do when they see a picture of something they've never had before, but heard it was good.
@@Josef_R just curious what would you do different? unfortunately all my ties to the south have passed away. My dad used to make gumbo and jambalaya all the time but I never got the recipe before his untimely passing. :(
@@collinmc90 First, all of the veggies need to be sautéed, but mainly, jambalaya is not a sauce to be poured over something. It's meant to be cooked into the rice which is NEVER separate. There are plenty of good recipes on here, just find one that has a coonass cooking it and it'll be right. Just substitute the rabbit for the meat or seafood they use.
#1 I was like hmm , something different, awe no hat . #2 seen them rabbit scratches where one raked you while picking up. #3 can't believe how much your fingers & mine are shaped the same, especially the ring fingers. #4 no matter what kind of meat I de-bone , always pressure cook them till very soft, can almost crumble them between two fingers, makes wonderful bone/soup broth . If only a few bones I freeze and add others till a small Quantity is ready. #5 my days of white food is over , have the use wheat instead of rice. #6 someone gave a thumbs down, first ever seen , video was great, must be a troll with unhappy life & hates everyone Great video 👌👍👍👍👍👍👍👍😇
Looks delish and similar to the rabbit cacciatore (tomatoes, celery, mushrooms, wine) I made. You mentioned exactly where I went wrong when cooking rabbit and what turned us off about it. I cut up and put the entire rabbit in the crockpot. It's unreal how many tiny bones we had to work through just to eat our meal. It wasn't enjoyable. Maybe we'll try it again another time.

Over 60 years of living in Louisiana and eating lots of jambalaya, I've never ever eaten or even seen any made without rice in it! The others commenting are correct. Sauce piquant is what you've made. There are some pseudo-Cajun recipes claiming to make it without rice and no doubt, it's very tasty, but dat ain' no jambalaya, Cher.

I highly recommend taking advantage of the rabbit belly. Treat it just like pork belly, cure it with some salt/sugar/spice (I like to marinade it), let it dry in the fridge for a day or so, then smoke it. Slice it up and freeze it, use it pretty much any time you want bacon. It will be a little bit more chewy than pork bacon, so let it cook a touch longer, and you'll need to add a bit of fat to the recipe since there is almost none... But it's delicious, and adds amazing flavor!

I miss raising rabbits. Of course raising them for meat is very healthy, as they don't have much fat.
Jambalaya is mad good with rabbit or squirrel with andouille sausage.
